Vegetarians: What have you eaten today?

Today ..
Usual breakfast .. nice warmed oats in the microwave ..no I don't get the saucepan out that time of day ;)

Lunch I made a nice pot of Stilton and broccoli soup .. small roll and pear

Tonight I have made a Thai curry .. the flown in aubergines from the market , tufu and peppers
All cooked in coconut milk .. :)
Feeling inspired to cook on these cold days .. :) to cook warming foods x
 
@Ledzeptt When I was a girl, it was all about the Sosmix and Tartex lol Kids today have so much choice. I was reading a similar article the other day about how popular veganism has become recently http://www.peta.org.uk/blog/brands-reacting-2017-vegan-explosion/ Even a bloke at my work has started having two veggie days a week (it helps that he's skint!)

Oh I shop online at sainsburys every week but didn't realise they sell a lower carb bread. I'll add it to my order this week.

I've started testing my sugars randomly even though the DN has told me not to do it all but I'm not taking her advice anymore lol
I'm pre & test regularly, it's the only way forward
 
My precious courgette is still intact as my daughter is threatening to make a Mexican feast for the weekend. Think I'll fashion it into a taco boat and fill it with tasty stuff. I will be making ferrero rochers at the weekend. Chilli and chocolates. Good combo!

Today and yesterday are the same with golden milk breakfast, salad for lunch and fry up for dinner.

B. chia, flaxseed and oat bran porridge made with coconut milk with sprinkles of turmeric, cinnamon, nutmeg and ground ginger
L. this is the 2nd day running that I've not been hungry at lunch as the porridge is so filling
D. soya mince bolognaise with courgettes and mushrooms.
