Vegetarians: What have you eaten today?

Just had an avocado thingy from the Dietdoc website, link below.

It was absolutely delicious. Here is a cut and paste of the recipe.

Green beans and avocado
  • 2 tablespoons olive oil
  • 2⁄3 lb fresh green beans
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 2 avocados
  • 6 scallions
  • fresh cilantro aka coriander (optional)
  • pepper to taste
Just mash up the dressing. stir fry the beans in the oil, and mix them together.

A Vegetarian is someone who lives on a diet of grains, pulses, nuts, seeds, vegetables and fruits with, or without, the use of dairy products and eggs. A vegetarian does not eat any meat, poultry, game, fish, shellfish* or by-products of slaughter.
Today I made bread (I use olive oil instead of butter) and cheese soup... I make it with leek, courgette, celery, onion, garlic, potato, once cooked I whiz up, add grated cheese (cheddar is nice) and a bit of cream. All the family love it.

(Even I broke my lchf diet to eat some! Ah well start again tomorrow did 5 minutes hiit exercise to try to counter any bg rise)
 
I know what you mean @Safi I don't mind cooking for one, but it often means I am eating the same thing for days. My fussy kids wont touch cauliflower :meh:

Brunch: feta omelette
Dinner: a portion of red stuff from the freezer - tomatoes, mushrooms, pepper, cannellini beans - on courgetti and topped with Cajun spice, pickled jalapenos and grated cheddar. A leftover chocolate mousse for pudding.
Wow really! My kids LOVE cauliflower, I usually have to fight them for it... that and asparagus, broccoli and Brussel sprouts! My kids are probably weird! They even eat salad! ;-) lol.... I found when my kids were in school they other kids bullied them for eating salads and stopped eating them for a while, I took them out of school because of the bullying and it really helped them to feel comfortable eating what they like rather than what the others wouldn't object to! I was also the only mum to be sending them with couscous (apparently it smells!) Drove me mad when they didn't eat what I made them (especially as I knew they liked it) hold in there I know it's tough.

This was quite an old post you quoted. Since then my daughter has become vegan and eats a wide range of vegetables and lots of them. She will now eat cauli mash and cauli rice. She still wont touch broccoli though which is odd as it is just a sexy cauliflower in my opinion.

Bullies will always find something to pick on! Glad she is eating now... yep I love broccoli... my kids call them little trees.

Don't worry about the date. It was a good prompt for me to take stock of how much veg my children are currently eating. Was also a good excuse to shoehorn the topic of bullying into a conversation with them x
 
At the weekend I now skip breakfast and for lunch have a fried egg and mushrooms. This allows me to lose a bit of weight.

For dinner I will make a vegetable soup from a recipe I found on the BBC food website. ... Onions, celery, carrots with half vegetable stock cube plus cumin and some chilli powder to spice it up. Add a carton of chopped tomatoes with basil and lastly add some beans such as kidney beans which you can buy in a small carton at the supermarket. I eat half the soup on the day I make it and the other half the next day.
 
Brunch: Tesco hp toast with peanut butter

Dinner: Mexican feast - my precious courgette made into boats filled with bean and soya mince chilli, tofu sour cream, coconut lime cauli rice, chunky guacamole

Pudding: Ferrero rochers - recipe on #45 of the vegan thread. These ones are a bit messy, but they all go the same way! :p

Making soup is so nice ..

Today
Oats almond milk and blueberries

Lunch .. cheese on toast .. no crusts and a pear ..

Tonight , we have cooked for two days , a lovely pot of lentil curry , sambar style with mooli aka white radish
And a lovely side dish .. two sweet heart cabbages with coconut and tumeric , simple street food in the Far East but I have eaten it for over 30 years :)
Common breakfast dish there ,.

Spelt flour bread for tomorrow , when I make a fresh pot of soup ..

Chocolate fridge cake in fridge with bowl of strawberries .. well it is Valentines week x so I guess I am organised ..
Now I can just relax and watch the snow .. no walking today I am cold ..and there is Sunday tv x

I didn't feel hungry till about midday today, so for lunch made a chickpea, spring onion and red pepper omelette together with cauliflower fried in butter, turmeric and fresh coriander.

Fancied baking this afternoon so made some devine almond and pecan cookies, these little gems don't affect my blood sugars so had 2 with a glass of Koko milk.

Dinner was vegetable stir fry of brocilli, peppers, spring onion, courgettes and Halloumi.

On holiday today and became the proud owner of two aubergines and four courgettes :D
