Great start on the improved BG control
You may be eating too much fat, try to eat just enough fat that you don’t feel the need to have snacks. I don’t like the name “Low Carb, High Fat”, I would be better called “Low Carb, Enough Fat”. But if you need to eat the fat to be happy, then eat the fat, as being able to control BG long term is the aim, and you can’t do that if you are not enjoying your food.
More walking and other exercise you do the better as it will build up muscle mass so reduce your insulin insensitivity, as well as the short term benefit of improving BG control on the day. Muscle mass will lower your BG even when you are sleeping.
Forget about losing weight for at least a few weeks, just try to get fitter and control your BG with low curbs so you can slowly reduce the insulin you are taking. Check BG often, so you know very quickly if it goes out of control.
Once you are able to safely stop using insulin and any meds that result in your body creating additional insulin, you insulin levels will drop. High insulin levels stop the body from burning your fat, so only once they are under control can you burn off your fat.
Don’t try to go too fast, don’t fast etc until you are off the insulin and insulin producing meds, as the likes of “Mr Jason Fung” monitor his clients closely, and it is unlikely your doctor is checking your bloods a few times a week. So keep doing what you are doing, but be sensible.
Don't expect to turn round a problem that has been building for many years in a few days.
