I eat buckets of cheese, mostly Cathedral or Pilgrims Choice cheddar and cream cheese, stocking up when they're half-price in Tesco. I find cheese the most satisfying single food in my diet. I think with the cheddar it's the salt and with cream cheese it's the texture and versatility (with chives, on salmon and lamb chops etc). If I see a recipe with cheese in, I'm on it. I will chuck out all the unsuitable ingredients and if I'm just left with cheese, that's fine. My arteries are probably clogged with cheese but at 76 that's how I plan to go out. That's not a moustache in my avatar, they're whiskers.
