I eat buckets of cheese, mostly Cathedral or Pilgrims Choice cheddar and cream cheese, stocking up when they're half-price in Tesco. I find cheese the most satisfying single food in my diet. I think with the cheddar it's the salt and with cream cheese it's the texture and versatility (with chives, on salmon and lamb chops etc). If I see a recipe with cheese in, I'm on it. I will chuck out all the unsuitable ingredients and if I'm just left with cheese, that's fine. My arteries are probably clogged with cheese but at 76 that's how I plan to go out. That's not a moustache in my avatar, they're whiskers.

Hi all I'm back, sorry, I've got hold of a handbook called X-Pert Diabetes version 11. In there they seem to be saying "amount of cheese per day should be about the size of a matchbox". All I can say is that I would need a massive matchbox to keep my cheese in. Anyone else read this book?

Not read it but think that is the NHS portion advice size.
My portions are closer to the Bryant and may cooks matches boxes....

I love this site because I learn more on here than anywhere. I am getting back into LCHF & kicked in seriously today again after the "warm up" last week. Here is my day. A glass of water first thing. A treat of a crumpet with lots of Kerrygold butter & cheese for breakfast. Lunch was a plate of mixed cheeses. Dinner tonight was 5 strips of grilled bacon, 3 fried eggs, a nice pile of onion rings cooked in Kerrygold. 4 cubes of Bournville chocolate for pud. After my water this morning I had coffee which is made with - hot water, full fat milk, a tsp of honey, a heaped tsp of coconut oil. All whipped up creamaly with a blender. Delicious

Do you have a BG monitor? What was you BG before your ate and 2 hours after eating your meals?

Might be worth getting one.
Crumpets are all carbs.
You'll find Honey is no different the sugar and onion rings even though they where cooked in butter would spike your BG.
With out testing you really don't know how your body reacts to what your eating.

I agree about crumpets & will be taking them out of the equation but they are a real treat & once these ones are gone that's it. I don't agree about onion because onion really is a super food & cooked in butter will be right in with my LCHF.

The problem is not the onion, its the batter its dipped in before frying which may be a problem.

I'm so sorry, they weren't dipped in batter, it was a large red onion I took off my allotment on Saturday, it was delicious. Whilst I agree about the crumpets I was of course fooling myself & your words have hit home. I find everything so confusing as I see some on here where it is all doom & gloom & then others (me included) take it in my stride. Back to work next week & then I'll be back on a small box of cheese all day and then a plate of home grown veggies (no spuds) and meat. I do have a portion of homemade yoghurt each night (Easiyo). Perhaps you can give me a heads up on red wine please? Again, lots of confusing information. I do like a glass of cider but if I had 6 pints a year I'd be surprised. I don't really have alcohol, may have an odd gin as that's supposed to have many health properties but I don't drink wine. If there's any truth to it being beneficial for type 2 I would certainly have a small glass with my dinner. I do spend quite some time on my allotment but I think I need to do more exercise. If you're still awake thank you.

Ah, unbattered red onions fried in butter sounds like heaven to me : )

and a glass of Merlot or similar seems to help my evening blood sugar levels.

Thank you soooo much for your gentle, kind advice. If you don't mind I'll come and find you in a month's time & let you know how I'm getting on. Today at 61 I'm weighing in at 20stone 2lbs. My waist is 52. I think that's my biggest risk. Thank you again, Steve

Cheese ? Oh yes please ! Living in France is like being in cheese heaven. But I do find that I'm becoming very fond of a lot of Spanish and Dutch cheeses.
But don't mention Mascarpone....that stuff should be banned ! It's criminally delicious. I limit myself to a teaspoon now and again but only when my wife is chaperoning me as otherwise I could quite easily go berserk and devour the whole tub.....and be violently ill, no doubt!

I do tend to find Spanish cheese eaten in Spain isn't cold enough and its been like that every time I've been.
Do they sell Spanish cheese here in the UK I wonder?
If I went into a shop and asked for some Spanish cheese would I then get liquorice flavoured cheese?
I do not like the sound of that.................
Wanders off whistling a jaunty tune.....
