Think I'm doing okay ???..

I wouldn't touch anything with sucralose but your meter will tell you if it's ok for you.
None of the ones ending in ose I read somewhere...but I only have a little anyway. Can’t find anything to satisfy your sweet cravings.
 
As was said above, peas in small portions, and 2 new potatoes with plenty of butter (or 2 small roast potatoes) may be OK for you. They are for me, which is a good thing in my case because, like you, I don't eat vegetables very often apart from mushrooms. I eat tons and tons of mushrooms fried in butter. You just need to use your meter to test these foods out. If eating something carb heavy, portion control is essential along with testing.
I do like mushrooms, covered in cheese, bacon and leeks. Two or three large flat mushrooms. Very nice.

Yes depends on what suits you some can have sweeteners ok and with others they cause tummy problems. I can eat sweets with sweeteners in and I am fine with those and sometimes I want to sweeten some frozen fruit and I use the pure stevia for that... some stevia has other sweetener added to it
 
@Patrick66 - if your OH is fine with recipes, the following websites are all low carb and useful for us. There are loads and loads of receipes on that lot.

The other thing tht can be useful is a site called yummly.com . To use yummly to best advantage you need to sign up. The sign-up process is a bit of a pain in the tail, but and it's a BIG BUT, it allows us to save our preferences - not just for low acrb, or whatever, but it allows us to save ingredients we can't or don't eat. So, for me that allows we to discount pasta, bread, gluten, sugar and so on.

Yummly is also a site where all manner of folks save their recipes, so trust me, there are thousands on there.

Each time you log in for a search for, a recipe for, say beef stew, and results that come back will not contain your food intolerances and will reflect other preferences you have set.

There's a lot out there, but it takes all of us a while to get our heads around it all and settle into a bit of a routine. You're doing fine.

I find stevia has a very bitter taste.

I found Yummly to be very good, once I had set it up. There's nothing worse than finding a recipe only to find it contains something we personally can't get along with.
 
My fasting blood was 3.3 over the weekend. Not good. So I took in some extra carbs and was aware that I had barely eaten in 24 hours or so..

Today, before eating breakfast, it was 6.2 and I had last had something to eat/drink about 8 hours previously.

I'm finding my appetite very variable. Never actually hungry (as in really hungry) but then periods where just the prospect of food makes me feel nauseous.

I think I am doing okay but now I am terrified of making a mistake and messing everything up especially with the all important "big" test a week away so a lot of enjoyment has gone out of eating.

My weight has dropped from 15st 9lb to 14st 9lb in about three weeks..

I think I am doing okay...but I really don't have the confidence that I am.

Anyone else experience that ?.

Exactly the same as you. Hungry occasionally, the feel sick at the thought of it.
