I'm confused and at a loss...

That you can give.. please don't include all of us in your "we" .
I found that testing FBG and before and after every meal was extremely useful in the first few months of T2. Even after drinks which is how I know that coffee with cream has minimal impact. My advice to @Starfish18 would be to test away until you start to see some form of consistent results then dial it back a bit.
Atm I do test before and after meals and my fbg and before bed
 
That's what I did last night. I was shocked to get a rise as much as much as I got
It is a bit odd after that meal but we do sometimes just get readings that make us scratch our heads..
Today is a new day but your food is exactly right so I'd just carry on as you are.
 
You are still early on in your low carb plan - and we are not mechanical so we can't really expect to have an automatic response every time.
As long as you are in normal ranges or thereabout that is the ideal - you can at least calibrate your 'new normal' diet over time so that you know the sort of thing to eat, in what amounts, and hopefully your metabolism will recover, get itself rubber side down again and set off into a bright future of diabetes free living.
