Cauliflower Rice

Had this at a friend's recently and was very taken with it as an alternative to rice. However buying it is expensive.

Any tips for making & cooking it? I have a food processor! If possible I think it would be sensible to make several portions at once and freeze any not going to be used on in a couple of days.
 
I just chop up a cauliflower, put in a food processor for a few bursts until it looks about the size of rice. Sometimes add herbs to the mix. Split up the "rice" into meal size portions (approx 200gm for two). Freeze.
When we need it, put in a microwave for about 5 mins.
Goes great with stews.
P.S. If the leaves and stalks look OK you can add them to the mix, saves on waste!
 
I grate mine, then spread it out on a baking tray and cook at 180C (non-fan oven) for about 12 mins. Cool and store in the fridge then add to stirfries or in the microwave for a minute for other meals.
You can add a little oil before you cook it, or salt, lemon juice, etc.
 
Cauliflower rice is nice with egg added tastes like egg fried rice. I also have it with bolognaise instead of sliced courgette. Nice in with lamb stir fry. Nice with a dash of lemon/pepper and fish mixed in with it. Just love the stuff but I limit myself now as it tends to bloat me out if I have it more than once a week.

Is it quicker than cleaning up grated fingers? :) The cleaning is partly why I think I need to make enough for several meals at one time, and the dishwasher is wonderful...
