Preferably hot, definitely low carb :)

I'm pretty sure that salmon melt muffins will work just as well as tuna melt muffins, and they're hot too!
Otherwise, have it as part of an omelette?

This is the tuna melt recipe I started with a couple of years ago, by now I know it doesn't matter at all how much of each ingredient you use, always turns out fine: https://www.copymethat.com/r/my-vw2dz3n47/myrecipe/

I originally got my recipe from the What have you eaten today thread, so pretty sure that a forum search on that thread for tuna melt muffins will yield a similar recipe (for the ones not using cmt).
My username there is Antje. Had to search to find out what my username is, laughed when I found it!
I even found a recipe for a tuna melt/bread thingy of yours on my cmt, copied from the main thread. :hilarious:
Never tried it though, I'd forgotten about cmt for months.

Here's the recipe as it is on my cmt. It's all in cups, oz, and Fahrenheit, neither of which makes sense to me so it's very unlikely I ever used the amounts as in the recipe. Can recommend more onions:


Ingredients
    • 5 oz. can of tuna fish, drained5 oz. can of tuna fish, drained
    • 2 large eggs2 large eggs
    • 1/4 cup sour cream¼ cup sour cream
    • 1/4 cup real mayonnaise¼ cup real mayonnaise
    • 1/4 cup onion, chopped¼ cup onion, chopped
    • 3/4 cup sharp cheddar cheese, shredded¾ cup sharp cheddar cheese, shredded
    • 3/4 cup pepper jack cheese, shredded¾ cup pepper jack cheese, shredded
    • 1 tablespoon fresh parsley, chopped1 tablespoon fresh parsley, chopped
    • dash of salt & pepperdash of salt & pepper
    • 20 slices jalapenos from a jar20 slices jalapenos from a jar
Steps

    • Bake at 350 degrees for 25 minutes. Serve warm.

Yes I'd thought of that but that makes a bread type substitute. This time I fancy something that celebrates the salmon rather than disguises it,and I've got to feed it to hubby too. Time for an Internet trawl methinks

My parents would pour a parsley sauce over the salmon. Not sure if parsley sauce is low carb.

Salmon pate? Low carb fish cakes?
Tinned salmon brings back childhood memories of Sunday tea, mashed up tinned salmon with a dash of vinegar & white pepper on open sandwiches, along side sliced cucumber in vinegar, maybe do the salmon on crunchy lettuce leaves or on cucumber “boats”

Fish pie with leeks and cheese topping instead of potato
Add Hellman's and whatever cold veggies you have to hand - or do a proper salad

The term "big boned" lol repeatedly told this growing up!
Fish cakes - Makes about two large portions fish, one egg, parsley or seasoning of your choice. Mash it all together so no lumps, spoon into pan. Shallow fry in olive oil till edges go a little crispy. Sprinkle lemon juice or dash of vinegar job done. To me it tastes like battered fish, love them!

I've never had a fish cake in my life but it sounds very good. :hungry:

I think the salmon melt muffins would celebrate the salmon, especially if you keep some chunks on the side when mixing to add in at the last moment.

What I’d do : boil 2 eggs , chop a little onion , dice a couple of Gerkins and mash the salmon into the mix with lots of decent mayo. Eat while still slightly warm from the eggs
