Yes I'd thought of that but that makes a bread type substitute. This time I fancy something that celebrates the salmon rather than disguises it,and I've got to feed it to hubby too. Time for an Internet trawl methinksI even found a recipe for a tuna melt/bread thingy of yours on my cmt
I'll need to try this!Fish cakes - Makes about two large portions fish, one egg, parsley or seasoning of your choice. Mash it all together so no lumps, spoon into pan. Shallow fry in olive oil till edges go a little crispy. Sprinkle lemon juice or dash of vinegar job done. To me it tastes like battered fish, love them!
