Well that worked out well trying to be better posting! I was slowly being driven do lally with everything I had to do. I eventually decided the break in Stirling was not enough, and advised hubby we were going to York in the October school holidays. First thing I did once hotel & train was booked, was to book my favourite restaurant in York - Rustique. I had escargot to start followed by a wonderful monkfish dish (photo below) which had a white cannellini bean sauce. I had one bit of the potato that came with it. Hubby managed to avoid A&E but I did my left leg having forgotten the number of flights of stairs in the Castle Museum. I could not move the following morning. It took some hard work with a deep tissue massager to loosen the joints and muscles. I still needed assistance. I still enjoyed my trip to York.

The rest of my time has been tied up with tutoring and trying to get on top of things for Christmas. There just doesn't seem to be enough time!

My youngest grandson has been competing again. Apart from the grading, he participated in the club championships and got 4 gold medals and a bronze! Golds were in breaststroke, backstroke, fly and individual medley. Bronze was freestyle and his goggles snapped when diving in but he recovered and got the bronze. To cap it all, he was presented with Top Boy in his group. I've posted his photos as Mum put them on social media.

I've got many, many posts to look at, especially one about an "axe man"???

A few more food posts.

I've been making chicken curries lately, with cauliflower rice. I tend to mix it with peas, sometimes jumbo spring onion and parsley. The middle picture should have been duck, but ended up as a kind of chicken cacciatore. The final dish is using SRSLY angel hair pasta with Argentinian prawns, peppers, onion and SRSLY sweet chilli plus tamari soy. Probably other veg in there but I can't remember.

For the first time in a year, I purchased DGF boxes. Rather fond of the mincemeat pies or the crimbo crumble, warmed and a dash of cream. I love!!! the chocolate topped gingerbread in the Christmas mixed box. I have them in the freezer to avoid a nightly dessert.

I'm still suffering with my legs, so I'm having to be careful what I do so as not to aggravate them more. Hubby got me a seriously heavy duty ferrule for my daytime crutch. I certainly needed it on Saturday when the weather was awful. I hope everyone is OK and not flooded.

It is £10 a litre in Tescos.
I resisted!!!
I make it at Christmas (a low carb version). Recipe is on my CMT but here's the link.

A word of warning, this has to be warmed VERY slowly to dissolve the sugar substitute. It always worked well with the Lakanto Monk Fruit but I've run out and can't find it here. If you don't get the dissolve correct it can curdle and has to be dumped. You can't leave it either. It needs gentle stirring.

Resisted breakfast as knew we would be lunching out.
l: halibut in a creamy dill sauce with crayfish tails. Nice but pricey and not a patch on the haddock at a different pub earlier in the week. And twice as expensive! 1 glass red wine.
Luckily we were spending vouchers we'd won in a quiz earlier in the month so don't pay full amount.
Had 3 spoons of hubby's cherry bakewell suet pudding.
Then I walked home , about 50 minutes up and over the hill while he drove to a meeting. Lovely colours in the woods and crunchy leaves underfoot.

D: 2 hard boiled eggs with mayo, 3 slices salami and soem fermented green peppers.

Christmas confession. I'd bought a lidl version of coffee flavoured Baileys for Christmas, but we/he opened it to try to make sure it was up to standard. Yes it is, but oh so drinkable. No idea of carbs. To make it last to Christmas I think it may have to go stay at son's who can bring it back with him.

There's temptation everywhere at the moment. How do you all resist?
I've been experimenting with a recipe for sole veronique. On my CMT but again here's the link.

I am considering using it for a starter at Christmas. I've made it 3 times now using this recipe and I prefer white sauvignon blanc rather than vermouth. The recipe is main course size. It will be cut down for a starter before turkey!

I've never managed to get swirling water to work, especially with multiple eggs..

One way is to half fill a mug with cold water, then drop raw egg in and microwave 2 minutes. But sometimes it doesn't work so well, maybe it's the temperature or the age of the egg? I feel some experimentation coming on.
There's something in my mind about a Hairy Biker tip for poached eggs. I think it was @Annb that mentioned it.

It was the traditional way of poaching (with a dash of ACV, slow simmer, swirl etc) but before you got to that you put the egg, in its shell, into boiling water for 20 seconds. Then out and into normal poach.

Up early for double dancing. (2 and a half hours)
Did pop to get takeout coffee halfway through, shared with hubby.
Very hungry when home again
L: hm lc chicken curry with caulifower rice. A choc chia pudding. Coffee with cream.
Afternoon helping at old people's club. A very small half scone with cream did fall into my mouth.

Skipped any dinner as suddenly felt unwell. OK now, but being sensible

Oh yes. I'd forgotten that. It was a Dave Myers tip.

Did a lot of cooking today but not much eating.

Breakfast was RyVita with cheese and ham.

Found that all of the meat and fish Neil had bought for me during the week should have (but wasn't) all been sold as short dated. Neil puts things directly into the big fridge in the back porch when he brings it home and I hadn't managed to get onto my feet early enough to check it all. I checked this morning and found the salmon was 2 days past its date, the lamb steaks, hearts and kidneys were 3 days past. Sausages and chicken thighs were right on their use by date. Everything was still alright. Big cooking day was the result.

When that was all over, I didn't feel like eating so didn't bother. Plenty drinks though.

That halibut and crayfish dish sounds wonderful @MrsA2, but unfortunately halibut is becoming very expensive. in some recipes haddock achieves the result you want and it is underrated IMO.

You're certainly not alone, temptations abound @MrsA2 and it's going to get worse next month.

It's my contention that retailers lay in Christmas fare early to tempt us, knowing that once purchased, most of us will sample it and end up buying some more for the main event.

Lovely photos @maglil55. It's good to know it's not illness that has kept you away.

Breakfast: salmon mayo with a RyVita and butter.

2nd meal: I have a choice - maybe finish an offal dish with lamb's hearts and lamb's kidneys; maybe lamb and kidney fricassee; maybe something with the cold chicken or the cold sausages. Can't quite decide just now. Maybe just put it all into one pot with some vegetables and invent a new dish.

Cup of coffee is needed and then I might be able to decide which to freeze and which to eat today.

EDIT: Ended up having shredded Brussels Sprouts and chestnuts with red lentil penne. Very good it was too.

It's been way too long so just a quick check in to let you all know that I'm perfectly fine and have eaten well!

Last weekend was full of family stuff with lots of food. On saturday I had mussels (lots of them) at my aunt and uncle's house with some 16 family members. Very easy to plate the good stuff from the sides of the salads and avoid the potato-y part in the middle so the main carbs came from a delicious but sweet dipping sauce to go with the mussels.
And from the dessert...
I had a very small portion of some type of caramel icecream with apples and cinnamon, and some of the amazing merengue with lemon curd. Both were made by my cousin, who was smart enough to combine a dessert needing lots of yolks with one needing lots of egg whites. Very much worth having some interesting graphs on my Libre, and back on track before bed.

Next day was lunch at another aunt's place with over 20 people, mostly friends of her.
Different types of smoked fish, shrimp, lots of good cheese, leg of lamb, a sauerkraut dish, can't remember what else but i was very diabetes friendly provided I skipped the bread and the dessert. Which I didn't, but portion control went much better than the day before so all was well!

Another date has been had yesterday, with a very enjoyable evening in the mud bath my garden is at the moment. We managed to get a fire going with very wet firewood (and half a bottle of lamp oil), grilled spareribs, then grilled some skewers with salami, onion and bell pepper which I sadly dropped in the mud when trying to plate them.
This one wasn't married, boring, or psychotic at least, and we both enjoyed the evening, but no attraction whatsoever from both sides so back home he went.
Oh well, this dating thing does wonders for cleaning my house which is a definite win, and I'll see what the next one will bring.

In the mean time I'm still trying to work out what to do about work or maybe some education, and of course it's almost Sinterklaas so my living room is filled with paper mache vegetables that need to dry, and poems will have to be written.

Sounds as though you've been having a good time. Glad to hear it.

Couple of cold sausages for breakfast, getting ready to spend most of the day at medical appointments. Several possibilities in the fridge for a second meal today.

I misread and thought that you had a mudbath with your date :D Thought that makes a change from cold swimming! Sounds like you have been having a fun time anyway.
