Oh, that's lovely of you. https://josekalsbeek.blogspot.com/2019/11/the-nutritional-thingy.html might help some too, as well as maybe Dr. Jason Fung's book the Diabetes Code, or his (free) youtube video's.
Knowledge is power, and you're about to give your dad the tools to make himself better.... That's a wonderful gift to give someone.

Your dad is fortunate to have you in his corner. As @JoKalsbeek said- knowledge is power. There's a lot of knowledge and experience in this forum. Read around and ask questions- the people here have a great deal of experience and are very willing to help and give suggestions.
