I found a very easy trick for a tasty and low carb cauliflower cheese. Just buy a pack of ready made cheese fondue and call it cheese sauce. Very little carbs, no work, and cheaper than the same amount of sauce made with actual cheese.

Yesterday I had it with a leftover hamburger, today with half a fish fillet a la bordelaise.
I also found the trick to have the fish taste better on the second day. One of those frozen but rather tasty abominations is enough for two days, but reheating always makes it dry. The stuff is a frozen block and you're supposed to put it in the oven like that.
So I used an electric jigsaw to cut it in half and put the other half back in the freezer!
Exciting week next week.

Another new date on wednesday. Very interesting man. Has a PhD in sociology and did his thesis on functional ability, social support and quality of life in patients with RA. A pretty interesting subject, especially seeing in how this forum is all about social support in dealing with a chronic condition.
Some 10 (?) years ago he quit the research work at the university to become a miller on this historical windmill. Currently he isn't milling due to a conflict with the foundation owning the mill, but he still runs the shop selling artisan flours.
We'll see!
He offered pizza and I told him this wasn't my preferred option due to pesky BG alarms and he didn't shy away from offering to cook after that. Looks good so far.

It's the Swiss thing with Gruyere and Emmental originally. Ingredients of the packaged stuff are pretty straigtforward. They'll slightly vary between brands but this one says: Swiss cheese (53%), white wine, water, starch, kirsch brandy, melting salt, salt, locust bean gum (not sure of translation, it's google), spices.I'm not sure we have that in the UK. I've decided that I will try again for an appointment tomorrow and failing that, will get Neil to take me to A&E. That's unless it miraculously disappears overnight. Don't like taking up A&E time, but needs must.@Annb I'm really concerned at the duration and pain and loss of use of arm. Promise me you will contact medics tomorrow and be assertive. What about a vegetable curry adding in some of the beans.I got a pack of broad beans out of the freezer yesterday to add to the veg soup. It had been in the freezer for months and we had forgotten about it. Unfortunately the contents were a solid lump so I just left the whole pack out to defrost. That means I have a whole lot of broad beans to use up. Might make a kind of hummus with it but it won't keep for long, so have to think of something else to do with it as well. Maybe a bean and sausage casserole which can then go back into the freezer.
Breakfast will be veg soup.

I use tinned coconut milk and the curry paste in my curry's but everyone has their own recipes and tastes. Bet yours was still edible.Well, it wasn't exactly a curry. I shredded some cold chicken, added some curry powder and some of the veg soup with some of the beans. It was alright. Not great, but quite edible.
