"What have you eaten" Parallel Chat

I believe I didn't get to posting again on here for a while, so here's your irregular update. :)

I found a very easy trick for a tasty and low carb cauliflower cheese. Just buy a pack of ready made cheese fondue and call it cheese sauce. Very little carbs, no work, and cheaper than the same amount of sauce made with actual cheese.

Yesterday I had it with a leftover hamburger, today with half a fish fillet a la bordelaise.
I also found the trick to have the fish taste better on the second day. One of those frozen but rather tasty abominations is enough for two days, but reheating always makes it dry. The stuff is a frozen block and you're supposed to put it in the oven like that.
So I used an electric jigsaw to cut it in half and put the other half back in the freezer!

Exciting week next week.
A job interview on monday, I might become a bridge operator if they'll take me. :)
Another new date on wednesday. Very interesting man. Has a PhD in sociology and did his thesis on functional ability, social support and quality of life in patients with RA. A pretty interesting subject, especially seeing in how this forum is all about social support in dealing with a chronic condition.
Some 10 (?) years ago he quit the research work at the university to become a miller on this historical windmill. Currently he isn't milling due to a conflict with the foundation owning the mill, but he still runs the shop selling artisan flours.

We'll see!
He offered pizza and I told him this wasn't my preferred option due to pesky BG alarms and he didn't shy away from offering to cook after that. Looks good so far. :)

No, I haven't had it checked out - can't get an appointment. I must admit I am really feeling the lack of sleep now. I want to go to bed now, but if I do, I'll have to get up again before 1 am.
Do you have NHS 111 in your area ( or the equivalent)? They can often do a phone "triage" as to the best next steps. I wish you would call
 
I thought they were only for emergencies. I'll check that out tomorrow.
999 is for emergencies, you can always call 111 for advice, please do!
I'm not sure we have that in the UK. Could you post a picture of the packaging sometime so I can work out if we call it something different?
It's the Swiss thing with Gruyere and Emmental originally. Ingredients of the packaged stuff are pretty straigtforward. They'll slightly vary between brands but this one says: Swiss cheese (53%), white wine, water, starch, kirsch brandy, melting salt, salt, locust bean gum (not sure of translation, it's google), spices.

Tried calling 111 but they are too busy dealing with urgent cases to talk to anyone else. Made me feel ashamed of myself for wasting their time when urgent cases would be trying to get through. I'll try the online NHS advice.

Breakfast: More of the mixed veg soup. The frozen veg mixture actually makes a very good soup. Surprised.

Cold chicken later.

EDIT: I tried NHS online but they don't seem to have much going for them in Scotland. Not a useful site at all.

22.05 just taken more painkillers and extra codeine. Too early to go to bed yet, or I'll be wobbling through at 01.30 and maybe waking Neil up if I need help. Trying to stay up until midnight, then I might manage to stay in bed until 04.00 - if the pills kick in in a couple of hours - that's the usual rate of effect on me. Still potentially a short night for Neil, unfortunately.
 
@Annb I'm really concerned at the duration and pain and loss of use of arm. Promise me you will contact medics tomorrow and be assertive. Can still be polite but don't be a pushover. You deserve attention as much as any one else. Xx
I've decided that I will try again for an appointment tomorrow and failing that, will get Neil to take me to A&E. That's unless it miraculously disappears overnight. Don't like taking up A&E time, but needs must.
 
Job interview tomorrow, and I'll have that interesting new date on wednesday.
The good thing is that I can swich between nerves for one and the other, making both easier to handle. :hilarious:

The daughter of neighbour Astrid has ironed my only blouse (which has spent about 10 years unused on my closet), she also folded it perfectly for me, and she told me which of the three possible trousers I should wear for the job interview.
Thank heavens for friends with talents I don't posess, she may be only 18 years old but she knows what she's doing on this subject, I'm absolutely clueless when it comes to clothes or ironing.
 
Well - not a miraculous cure, but it is a bit better and fairly manageable. Still no way to get an appointment but not bad enough now for A&E. I phoned the surgery and asked what had happened about my stronger pain killer. Apparently they are very short of doctors at the moment (8 on their list, but who knows why they're not working) and nobody got around to dealing with it. Receptionist promised to try to get a GP to see to it.

I bought some buckwheat crackers for Neil but they don't suit him - headaches - so I had some of them with ham for my breakfast.

About to make some more veg soup for later.
 
Missed posting food for a couple of days. Stuck to low carb, even refused the cornetto offered as pud at the village quiz on Saturday night.
Had a long (2 hour) walk yesterday, been in the garden weeding every day and did yoga. So why is my weight and waist going up?

D: cold cooked chicken mixed with half avocado and mayo. Small coffee ice cream
 
Job interview went very well!

This was the first round with the job agency which pre-selects who'll go for the next round with the actual employer (city of Leeuwarden in this case).
They were very happy with my experience, knowledge, enthousiasm, and flexibility (no children, I don't care about days or times).

Next round with the employer next week!
So I put my only set of marginally acceptable clothes back into my closet before I could ruin them to use again in a week. :hilarious:

And now I can focus on being nervous for my date on wednesday. He really seems very interesting so far so who knows!
This weekend he warned me that the heating in his house isn't on. Which made me laugh and tell him mine hasn't been on for at least two weeks. (Everyone is always freezing at my place unless I know I'll get visitors, in which case I'll turn it on.)
We just had a fun conversation on vacuum cleaner bags. He tried to get himself to vacuum since saturday because he'll have a date on wednesday, and finally did a bit of vacuuming today. Promptly vacuumd up a usb stick and had to retrieve it. Which led to a conversation on re-using the bag after retrieving something from it.

Anyway, this really does sound like we have a lot in common...

Date at 3 pm, his idea is to do some sightseeing, very nice as I used to have a little boat in the area a long time ago, and then get groceries together. Very smart man: date someone with dietary requirements you don't fully understand so propose to shop and cook together. I like his thinking!

I also finally cooked a decent meal again today, one of my go to meals of green beans, onion, bell pepper with a spicy peanut sauce, half a pork belly strip in pieces rubbed in black bean and garlic paste, and a fried egg fresh from the garden.

I got a pack of broad beans out of the freezer yesterday to add to the veg soup. It had been in the freezer for months and we had forgotten about it. Unfortunately the contents were a solid lump so I just left the whole pack out to defrost. That means I have a whole lot of broad beans to use up. Might make a kind of hummus with it but it won't keep for long, so have to think of something else to do with it as well. Maybe a bean and sausage casserole which can then go back into the freezer.

Breakfast will be veg soup.

What about a vegetable curry adding in some of the beans.
 
Well, it wasn't exactly a curry. I shredded some cold chicken, added some curry powder and some of the veg soup with some of the beans. It was alright. Not great, but quite edible.
I use tinned coconut milk and the curry paste in my curry's but everyone has their own recipes and tastes. Bet yours was still edible.
