Is it safe to eat one meal a day (with some snacking) as a T1D?

I've recently started eating only dinner meals (between 5:00pm - 7:00pm) and I'm worried this may throw off my A1C or cause other issues. I've adjusted my basal rates to reflect this (less around typical breakfast/lunch timing) but I don't know if that will be enough. Has anyone tried something like this and if so what was your experience?
 
I cannot see one meal a day causing any problems, providing your readings stay within the range.

Your hba1c is simply a reflection of your average blood glucose (to be more precise, it measures how much glucose has bumped into your red blood cells during their lifespan).
I'm assuming you're using a CGM, being T1.
If the fasting doesn't cause you highs or lows, it wont affect your hba1c.

As long as you're able to adjust your insulin to your life like your pancreas would do as a non diabetic, no matter if it's fasting, grazing, high carb or low carb, it works. Time in range, time in tight range, and time below range tell you how you are doing, hba1c only reflects this.
