"What have you eaten" Parallel Chat

Greek yoghurt for breakfast, out to lunch and tea will be decided later depending on what lunch was!

Something has calmed my digestive system right down. I haven't had gluten for 5 days, so that's my first guess. I love bread and baked goods, but if it's responsible for the digestive issues that's a second reason it shouldn't be in my diet, along with the carbs.
 
Had a hectic but lovely few days but now a few quiet albeit hot days are planned.
Yesterday I hosted a birthday lunch for a friend and made a Panda Flour LC quiche served with salads from garden, hummus, and a cheese board and leftovers were our evening meal too. Panda Flour is gluten free as well as low carb @jpscloud if you ever fancy making your own.
Planning roasted tomatoes this morning on LC toast, hummus for lunch and cold chicken with salads for dinner. Having a go at using my new little combi oven to cook a whole medium sized chicken this morning.
Edit bt engineer coming sometime tomorrow morning to fit full fibre connection so may be offline first thing if MIA again

I didn't know Panda flour is gluten free, thanks @shelley262 - I might give it a go. It seems very expensive though! I might have a look for cheaper ones, although I suspect Panda is expensive because it's very good quality so that might be the best option.

Think you can get a free sample bag as a new customer. Plus free delivery even if small sample order. Plus it's nothing like wheat flour in terms of nutrition and how it behaves and you use about a third of the standard flour you would as it expands with the liquids so a bag goes further. Lots of fibre and protein.
Edit Ps Panda Flour isn't like any others out there cheaper ones often use gluten and gluten free ones often high carb.
 
The rest of the cauliflower cheese for breakfast. Tea (the new jar of coffee is in the larder and too far for my legs to carry me this morning, so at the moment, I'm on tea).

2nd meal will be salmon with some salads.

Talking to a visiting friend on Monday, we both realized that, although we eat meat and fish, we don't really like doing it - both of us have found our tastes have changed as we have aged and flesh doesn't seem particularly pleasant these days. I used to be vegetarian but, when we moved to the Island, vegetables were more expensive and not very good, so we introduced more meat into our diet. Good quality or not (not), I find I've reduced the amount of meat I am using these days, and will be aiming for even less in future. Shan't go as far as Neil though. Except for times when he needs tinned mackerel to treat his Crohn's, he is vegan.

Yes I noticed that!

I had fish and chips at lunch (it wasn't the pub where they served dodgy fish) which was gluten free. It was hake but somewhat underwhelming, had a fishy taste... I know, I know, but it was the sort of fishy taste that means the fish wasn't very fresh! The chips were surprisingly good, I ate too many of those.

For tea I'm having a chicken tikka from Marks with onion bhaji and some resistant starch rice I made yesterday. Bit of a treat, I am having that again for tea tomorrow as it was 2 mains and 2 sides for £15.

Speaking of underwhelming, did anyone watch the eclipse? I'm glad I didn't fork out for glasses, the sun was already just below the trees/rooftop opposite and as it was already evening it was just like a normal sunset, only a bit protracted. I had the royal observatory image live on my phone so I did see the eclipse happen, it just didn't actually get dark.

@jpscloud we went for a wonderful forest walk during the eclipse and we felt it was an amazing experience - plus on way back such a spectacular sunset. I think it was a matter of luck or not with the clouds and being evening it didn't feel as dramatic as it was at noon in 1999.
Lots of flying ants around in the forest which was unusual.
 
That does sound quite magical @shelley262 ! I have some ants in a large flower pot that I cleared ready for a nice foxglove - as I dug a little I found a lot of the winged ones ready to fly so I left them alone. They still haven't flown! They like a certain level of humidity to get flying, so good luck with that this year, ants! I'm a bit annoyed I can't plant my lovely foxglove though :hilarious:
 
I remember, when I was in primary school (in the dim and distant past) we were all given pieces of smoked glass and taken outside the classroom to watch an eclipse. I remember being singularly unimpressed. I'm afraid I remain so. Good luck to those who want to rush around the world to get a good view, but I just turn the light on and stay indoors. Philistine! Same with the northern lights, harvest moon, stars and so on. Tom used to haul us out to see certain constellations - our skies are pretty dark. I don't think the boys were particularly impressed either. The sky at night, of course, was Tom's business, as a navigator.
 
I was still teaching when we had a partial eclipse in the morning in 2015, the whole school went outside with glasses to watch and it was pretty good, much better than today's in my view. A very confused heron flew back to its roost, probably having only flown out a couple of hours prior! I can only imagine its annoyance when the light went back to normal again - wait, what?!
 
Just some crackers with cheese for breakfast. Eating too many crackers but it is so much easier than sorting out anything more complicated. Tea - still haven't got the jar of coffee out of the larder.

2nd meal: I still have some cooked pigeon peas to use up but I also have some chicken breasts out of the freezer. Don't think the two will go well together, so I'll have to choose one or the other to eat today and just have the remaining one cooked for tomorrow. Probably have the peas with vegetables and poach the chicken to have cold tomorrow.

It's a hot, hot day here today, so I won't be doing much other than watering and hiding from the blazing sun. All my lettuces are toast, literally! I'll sow some more after today and it should be much more lettuce-friendly weather next week.
 
Full fibre internet now up and running. We were not offline for long thankfully.
Breakfast had LC granola with kefir and for lunch a LC roll with ham, mustard, tomato and spring onion. I braved the heat to harvest one of our big tomatoes and it felt so hot it was probably cooking! Tasted good though the heat probably brought out the flavour. Planning to use leftover chicken with some veggies and chilli plus garlic as a filling for a LC flatbread spread with hummus served with salad provided my salad leaves are not cooked in the sun! Usually love harvesting but not keen today with the dreadful extreme heat -36 degrees!
@jpscloud chicken cooked perfectly yesterday and in 35 mins.
