"What have you eaten" Parallel Chat

@jpscloud love the garden photos good to see things thriving. I managed to spend a few hours out there yesterday with temperatures cooling down nicely. Hopefully will get more done over next few cooler days. I need especially to sort out my salad leaves as a lot are now bolting so need to re sow some. I did sow some new rocket a few weeks ago when cooler but it's not done too well in the crazy heat.
Breakfast will be roasted tomatoes on LC toast- my tomato glut is in full swing! Lunch salad with smoked trout and for dinner I will be making hm LC lasagne sheets and assembling lasagne using the Bolognese I slow cooked yesterday and a cheese sauce. I'm aiming to prepare four lasagnes one for dinner today and three for the freezer. Will be served with salad.
Hoping also to bake a LC quiche ready for tomorrow as out all day.
 
Thanks @shelley262 - it's a good thing you can't see my several corners of shame, there's a lot of untidyness at the moment!

Lovely day here, clouding over so gardening is on the agenda. It's been difficult to just keep up with the watering and harvesting, and now it's time to freeze beans for winter. I've decided not to bother blanching - I did an experiment with the cobra french beans, washed, dried, cut and frozen then used in the rice cooker with brown rice I was cooking for resistant starch. They turned out pretty much as good as fresh, so that's the way to go I think, and it's a big relief not to have do all that blanching.

I also need to get salad leaves sown again @shelley262 - fingers crossed for rocket, which has had a terrible year so far! I sowed some french mixed lettuce a couple of weeks ago which looks ok, and I'll sow more cosberg and frillice now as well.
 
I forgot to post my food yesterday - it was the usual, porridge for breakfast, cottage cheese salad for lunch and stir fried vegetables with chicken and a little bit of brown rice for tea.

I'm out getting the car serviced and MOTd today, so after porridge for breakfast it'll be lunch at Costa - I'm not going to worry about carbs today as it's a bit of a walk to the Costa and back to pick the car up, and I find if I'm active my sugars drop really well even after something carby - I think the medications help a lot with that. I'm using a stick these days but I will try to walk as briskly as I can!

Quick breakfast in a few mins of kefir and LC granola and planning on my usual packed low carb lunch of a LC roll when out. Baked a low carb quiche for dinner and will serve it with salads.
Loving the cooler conditions and we even had a few minutes of rain late evening yesterday.

Hope the MOT goes/has gone well and not too many 'advisories'. With the slightly lower temperatures the walk shouldn't be as arduous as it might have been, but take it as easy as you are able, even if it isn't 40C down there.
 
RyVita and ham for breakfast with tea.

2nd meal will be chicken and mushroom soup. Quick and easy to make. Dried mushrooms soaked and ready to add to the fresh ones, chicken and stock ready to go. Just have to chop some onions and garlic and all the prep is done.

I made the veg lasagne yesterday, but at the last minute decided on slices of aubergine instead of the lentil pasta sheets. I had a couple of forkfuls and abandoned it. Just didn't want to eat. It went into the compost bin.
 
Thanks for the good wishes! It was a full service and although it passed the MOT I had a couple of advisories that I didn't want to risk - battery and cracked front tyres (they were pretty old) so I needed a lie down in a darkened room after paying! But at least the car is good for another year, and I have peace of mind if I decide to go on a longer journey sometime.

I actually enjoyed the walking - it wasn't too hot, and using a stick, I don't seem to get as much muscle pain and can move much better. Despite some very non-low-carb items for lunch, my BG didn't go above 8 and dropped to low 5s before tea after I watered the garden.

I've just had a curry from the freezer for tea, now time for some coffee, then a shower and I need to change the bed today.
 
@Annb hope you have a better day today - I love veggies but aubergine is one I've tried to like and although I will eat it I don't enjoy especially when it's in slices and if it's undercooked! Happy with it in dips like baba ganoush.

I heard rain last night but looking round the garden very little evidence of it left.
Out this morning so quick low carb granola soon, salad lunch and probably chicken with mushrooms and beans for dinner.
 
I had a bit of a restless night and I'm up late today!

We've had heavy rain overnight and it has soaked everything and even left puddles! I will still have to check my containers and there'll undoubtedly be a slug party out there now so kind of dreading what I'll see on the morning check around :eek:

I have to agree - it's not easy for me to enjoy aubergines, at least if they are in chunks or smaller bits in a stew - it's the skins that bother me, but sliced thinly and baked in butter or, as you say, in baba ganoush they're fine, and it gives a bit of variety, but I'd never put them in any kind of stew. Not even the little ones with softer skins.

US scan today and I've been told not to eat anything or drink anything other than water, black tea or black coffee for four hours in advance. My appointment is at 11.30 so I had some breakfast at 7 am with a cup of tea with milk. It was RyVita with banana crushed onto it. Normally that would do me for a good many hours, but being contrary, I'm hungry now. Drinking water isn't really helping. It's all in the mind!

Welcome to this thread, @Mrs Redboots (Annabel). There is another thread that deals only with what we eat, but I, for one, can't restrict myself to that. Being housebound (other than when someone takes me to see a nurse or doctor) the folk here are becoming my closest friends so the chance to chat about things other than food is welcome.

I hear good things about semaglutide from my daughter in law who has brought her diabetes under control, along with her weight, using it. Diabetes nurse refused it for me due to various other health issues which she thought made it a bad idea (same with the injections). That's contrary to the opinion of a GP and a consultant but their opinion is over-ridden by the diabetes nurses. Good luck with keeping up the good control using it.

Welcome Mrs Redboots! Looking forward to hearing that long story one day :) Here we can post about what we're eating, but also put it in context with our daily lives, and also just friendly chat. I have mounjaro injections at the moment, along with some other medications, which work well for me. I'm due my HbA1c and diabetic review in a couple of weeks.

@Annb I hope that scan goes well. I fancy some chicken and mushroom soup too now! I've defrosted the hake though and I haven't got any mushrooms so I'll do that another day.

I got loads done in the garden today, it's amazing how much more energy I have in cooler conditions.

@Annb hope your scan went well. It's funny isn't it when you are told you can only drink water how much you want anything but! I've found the only trick that works for me - especially on a cooler day - is to drink the water hot ie tea temperature. I drink weak black tea normally so can fool myself plus at least you can warm your hands on the mug if it's a really cold day.
@jpscloud isn't it weird how your energy improves after a hot spell. This last hot spell especially affected my energy and my eldest son, who lives with challenging conditions, has needed a lot more help than usual as he's been badly affected by the heat. Think his already low resilience is much lower after so many heatwaves! Let's hope we have a proper respite this time round.
My small combi oven is great btw as it doesn't emit too much heat so managed to get some low carb bread baked this afternoon.
 
A very nice surprise!

One of the chickens has decided that the dog pillow behind my gas heater (not sure of the right word) in the living room is the perfect place to drop an egg every day.
I have been away a lot lately so I hadn't noticed, she apparently sneaks in when I'm not around.

I just swapped those 8 fresh eggs for two rubber ones, I don't mind a freshly laid egg delivered to my living room every day. I like to take one or two with me to work so this is perfect!

Today I made a moussaka (no potatoes) worth at least 4 days of food on the bridge.
I hope it'll taste as good as it looks!

Thanks for a lovely welcome! Today I had a cup of Lady Grey tea first thing. Well, second thing, as you have to wait 30 minutes after taking the semaglutide before you can have anything at all. I then had overnight oats for breakfast - I make these with oat milk, then either chia seeds or milled flaxseeds and maybe some nuts (flaked almonds or walnut pieces); if I'm using frozen fruit I'll add it then. Otherwise in the morning I'll add fruit, usually including a banana, a couple of spoonfuls of natural yoghurt or kefir (usually home-made) and (I regret to say) a spoonful of dark brown sugar. Then there was orange juice - I juiced an orange today, but often I have bottled, and coffee (black, no sugar). Lunch was a bit of quiche with various salady bits - chickpea salad and coleslaw, both from Lidl, then half a tomato, a chunk of cucumber and a few olives. Followed by melon.
And I've just eaten chicken thighs marinated in yoghurt, with an Italian dish of new potatoes, green beans and tomatoes, which was absolutely lush and didn't really need the chicken, but I thought it might be a bit low protein without. And then Tesco's lemon fools to finish.

As you see, I don't really do low-carb, although I do try to do low-GI. Not always successfully - but, moderation in all things.

Went for a walk down to our local shops, and round the covered market. It's massively cooler today, but so muggy.... means I've drunk masses of water as well as (so far) two cups of tea. Usually Lady Grey first thing, then Earl Grey the rest of the day. No milk or sugar, ever, nor in coffee, neither. I'll probably have another cup of tea before bed.

Tomorrow I have to have a blood test at 09:20, so I think I'll give myself the very rare treat of a McDonald's breakfast! Can't remember when I last had one, but I do love them once in a very great while. Should have had the blood test a couple of months ago, but totally forgot about it, so went into the surgery today and booked it then and there!
 
@Mrs Redboots I try to do low carb most of the time, but I'm on dapagliflozin as well as mounjaro, so I've been warned to be careful about blood sugar going too low. I have some carbs in the form of potatoes and rice, but try to make them resistant starch. And then some days I have things that are definitely not low carb and definitely have no place in the house, but there we are!
