almond flour

I have run out of almond flour (shocking I know!) and Lidl don't seem to be restocking.

Does anyone have any recipes for cakes/biscuits I can make using other flours - I have soya and coconut?

More importantly where do you all get your almond flour from at a reasonable price? I use so much of it that I can't bring myself to pay supermarket prices.

I bought ground almonds in one of the health shops like Holland and Barrett can't remember the name but they sold it in plastic tubs.I bought it because everyone said it is good so I used it for pancakes and I thought they were horrible so have never used it since. I don't make cakes not got a sweet tooth and I don't think it would work in the bread which I do make sometimes I usually only use wholemeal flour for that

I made almond flour muffins today for the first time and they are great (although the fake sugar has given me the jitters lol)

I wish I could get hold of some coconut flour to make these http://lowcarbdiets.about.com/od/breads/r/coconutrmuffins.htm but it seems very expensive in Holland & Barrett and the local supermarkets don't stock it. I just get almond flour in the supermarket, but don't go through a lot of it.

I didn't bake anything today!

I bought my coconut flour from holland and barrett when it was buy one get one half price and don't use alot. Thank you for the recipe for coconut muffins I will try them. I prefer almond flour to coconut but need to use it up. I also don't use any sweetener so find that almond flour is sweeter than coconut.

I guess I will have to buy my almond flour from the supermarket

The name of the shop I bought the tub from was The Grape Tree I think someones else has mentioned it It is 500g and I think it was about £4.99 don't know if that is expensive for ground almonds

I made these last week with blackberries and they were very nice. I didn't put any sweetener in though so they are probably even nicer with a bit of sweetness. The dog liked them too as he ate the whole lot (apart from the one I had eaten) - and that is why I don't put sweetener in my cakes any more. I will be making them again.

I still haven't bought any almond flour but I have found a couple of recipes using coconut flour.

The muffins were so nice you fed all but one to the dog?! :joyful:
 
Those plain almond muffins that I made recently were too sweet so I put them in the freezer while I pondered what to do with them. Just defrosted one for tonight. Going to douse it in spiced rum and make a boozy pineapple jelly trifle.
