Made pickled onions with Balsamic vinegar 3 weeks ago ( Cold Method and used sweetener in place of sugar) and tried one with Cheddar today, very nice.Great news, as I am a big cheese lover, all types .I had some Edam today and a small piece of Cheddar with pickle onions and chives in itLovely
I don't believe it is a 'junk' food, it contains vit A, calcium, iron, vit D , some B vits and magnesium (probably small amounts of other minerals too) . For many people it is also enjoyable and that is important. As such it isn't junk.Wheat component of cheese is junk please ?

It is high in fat and low in carbs. It must be bad for our broken bodies![]()

As has been said before, we're all different and guess what, lowering carbs affected my total cholesterol much more than cheese. I've lowered my carbs to about 80gms per day and although I haven't significantly increased my fat intake (stomach just wouldn't cope) I do eat small amounts of cheese more often than the almost total ban that existed before following the low fat malarkey. Total cholesterol 2 weeks ago, after lowering carbs, throwing the statins out the window (6 months ago) and eating more cheese was 5.4. I suppose I could stop eating cheese and see if there's a difference but I know that with increased exercise my cholesterol will drop anyway. Amazing stuff cholesterol, our bodies need it and make it because it can't rely on us consuming the stuff. In fact eating cholesterol doesn't mean you have higher cholesterol. Surrey University did some research where they got students to eat loads more eggs for 12 weeks. Result? No raised cholesterol. Amazing stuff!I was a bit surprised when my dietician told me to eat cheese if I was hungry but had above normal blood sugars. Turns out cheese really doesn't have that many calories for the amounts we usually eat. Not good if you've got cholesterol issues but in turns of putting weight on, fat isn't the main cause of what makes people fat. Most of the fat we eat tends to come straight back out the other end and carbohydrates are far more responsible for making us gain weight. Someone could practically live off almost nothing but sweet and sugary products without gaining weight IF they only consumed small amounts at a time or burned the energy off before it gets converted and stored.
My trig level Is actually lower than DD.. Mine have always been low......0.28 However this time lsst year my trigs went up to just sbove 0.35 and my LDL equalled my HDL so thsts why my consultant recommended a mild dose statin.Well, since adding more fat into my diet, and yes the majority is cheese my triglycerides have remained very low....0.5 now, my hdl remains above normal ranges and most importantly my ldl is down to 2.7.
I've only added more fat in to my diet in last 6 weeks (i think) since Phoenix explained things so clearly to me.
I know cholesterol can take 6 months to change, but already my ldl is lower...
More cheese, madam?? Yes, please is what I say!

Good point! The French seem to eat a much fatter diet than us British, hence the term "French Paradox". They eat more fat than us and have less CVD (Cardio Vascular Disease). Spooky? No Ancel Keys wasn't exactly honest with his research into the relationship between eating fat and CVD, although the six points he had on his chart showing increased fat intake corresponding with increased heart disease, he's failed to put the other 16 pieces of data on the chart. A subset of any 6 points could have shown anything you like.Tell that to the French who eat bucket loads, especially the blue cheeses and the French come pretty high on the low cholesterol scale.
