What have you eaten today?

The chia pudding is very nice! Funny texture, but very tasty. Not sure I made it right, but I enjoyed it. Made mine with

2 tbsp chia seeds
1 tbsp coconut milk powder
1 tsp cocoa powder
0.5 tsp truvia
0.75 cup of water
Few drops of banana essence

Divided into 2 glasses and put in the fridge of 4 hours so far. Thanks to whoever started talking about it :D


In other news...I got unsalted Kerrygold this evening in Sainsburys. Had given up actively looking for it so am pleased to have stumbled upon it.
It may have been me, but thank you for the coconut milk powder idea - I mix it first and no need... :) We have Kerrygold here in our local supermarket in Bahrain... :cool:
 
If it was a really dark rye, you may get away with it. I'd be interested to know where your numbers get to.
Lol I did amazingly. And it was quite a large square roll too. Not a very dark rye but lots of seeds...I tested before at 6.1 and at one hour 7.0 and 2 hours back to 5.9. Pretty amazing. Obviously I will need to test this again. Yum :)
 
I've been having quite a thick slice of artisan spelt bread with my boiled eggs several days a week and it doesn't seem to have much effect on my levels. The baker said that they don 't use sugar in it at all and it is all wholemeal with odd bits of the unbroken grain in it. I think that most of the trouble with bread comes from the modern baking process which is basically lots of refined flour and sugar and chemicals.

I used to make a spelt loaf without sugar or salt added and even with a fry-up with bacon, 2 scrambled eggs, cheese and tomato, it raises my BS too much for comfort (about 1.5). Alas, l I have no other use for my bread machine ... unless someone can suggest something ...

The same for me... No grains at all.. Ever...:(
 
If I have it with eggs or bacon or both it raises me by about .5 - often I get no raise at all after breakfast. I find that an acceptable rise given it has eased the terrible constipation I had low carbing, even on Metformin.
 
Can you get the smoked roe for it in the UK? My husband looooves it... how clever of you to think of using chia for the bulk instead of breadcrumbs... :) I have a lovely recipe from the chef in a boutique hotel in Athens - it's not pink, either... :) If I can find it I will post it for you...

flaxseed bread was quite possibly the vilest thing I've ever tried. I don't mind it sprinkled on berries but it's not the weather here for a cold breakfast and
hothoused strawbs have no taste.
 
B: raspberries yoghurt and cream and coffee with cream
L: some things slices offers and a chicken breastfeeding portion - I had this for 3 o'clockses as I felt a bit peckish
D: not very hungry so I've just had some yoghurt berries cream and oats. I think I'm going to have one of those evenings where I just pick at things

I get Maggi coconut milk powder in Tesco. Big yellow box. I use it in korma, cauliflower rice and now chia pud. Lasts for ages.

Thank you! Just bought some from tesco, it was £3.59 for 300g or £7.50 for 1 kg! Quite expensive I thought and even though the larger pack would work out to be more economical, I bought the 300g box which is huge amount of powder! :)

You will use it though - and it has a long shelf-life... :) I like drinking it cold from the fridge... in fact, I like it any which way!! :)

Thanks to my new BFF @AndBreathe for posting the recipe this week :D They are fab, especially as I am mad for fennel. Made mini ones and think they would be ideal for a party or buffet (or eating every day as they are so good). Used finely chopped Quorn pepperoni slices and cooked for 18 minutes.
