What have you eaten today?

Thank you! Just bought some from tesco, it was £3.59 for 300g or £7.50 for 1 kg! Quite expensive I thought and even though the larger pack would work out to be more economical, I bought the 300g box which is huge amount of powder! :)
You don't need to use a lot as it is intensely coconutty. I like it as I would just waste a whole can of milk/cream. I sub coconut milk powder mixed with a bit of Philadelphia for coconut cream when making korma.
 
Smoothie with Super Greens
Double espresso Bullet Proofed
Prosciutto, goat's cheese, olives stuffed with anchovies and 3 cherry tomatoes
Bullet Proof espresso decaf
Piece of low-carb cheesecake - lush
Chicken breast and celeriac roasted and mashed with butter and nutmeg
Hot chocolate made with cacao and watered-down coconut milk - with stevia
Better get to bed before I succumb and eat more cheese-cake... :D

Im the same when I open a can, I never can use it all... This is much better

So how much of powder do you think I should add to a glass of water, to make coconut milk? About 1 tablespoon or is that too much? :rolleyes:

Love this stuff - use it for:

Instant coconut goodness in curries
In green smoothies (today's was kale, courgette, frozen pineapple, frozen Strawbs and this coconut powder)
In baking
Instead of cream in a LC hot choc
Tried it in coffee and tea too - not a great success...


Today's food:

B: chicken livers in buttered horseradish. A fine, fine breakfast, and one I will repeat. Will add spinach or peppers next time.
S: green smoothie 350ml (I've decided to stick with protein brekkie and slip the green smoothies in later in the day, after the protein has caused my dawn phenomenon to subside. :D)
L: hummus, plain coyo, 350ml green smoothie
D: pork shoulder (pulled), chorizo, onion, peppers and aubergine in Tescos' yummy Jumbalaya paste
And 4 (Bad B!) squares lime and chilli 70% dark choc.

A decadently indulgent gourmandish day. Lovely.
 
B: Edam omelette

L: chocolate chia pudding with strawberries and flaked almonds, creamy decaf (oh my!)

D: donuts and gin

Thanks to my new BFF @AndBreathe for posting the recipe this week :D They are fab, especially as I am mad for fennel. Made mini ones and think they would be ideal for a party or buffet (or eating every day as they are so good). Used finely chopped Quorn pepperoni slices and cooked for 18 minutes.

Re coconut powder quantities, there are some instructions on the side, but I just keep spooning it in til I get the consistency I'm looking for...

Sounds about right. Don't know exactly as I usually just chuck some in :oops:

Sounds perfect to me... :) I've been using dried coconut milk for years and never thought to do anything much except drink it or make it up for curries... thank you ma'am...

OMG!!! I LOVE that ^^^^^ green smoothie... I can see that being tomorrow's breakfast.

Well, um... I kinda tipped a lump in.

If I had to guess, it was maybe two very heaped dessert spoons, in a smoothie about 1.5 litres...
But you could always just add it as a last ingredient, and keep tasting.

The strawberry flavour was lost, by the way. Peaches would probably hold their own against the pineapple/coconut combo much better...

New to this:
Strawberries, Greek yogurt, seeds
2 egg omelette, 15g cheese, lettuce, cue, pepper, toms
Chicken breast with pesto, cabbage, leek, pepper, broccoli
Apple, packet of crisps
Lots of water, 3 cups of tea (1 with almond milk)
 
Breakfast boiled egg bacon, spelt toast
Lunch pate cheese few bits tandoori chicken slices celery carrots pickled onions tbsp coleslaw
Snack soy latte 2 sq chocolate
Dinner leftover roast pork, roast swede, few carrots, green beans and broccoli 2 tbsp gravy
Snack 1 sq Lindt coconut dark chocolate
 
B bacon and scrambled egg
L homemade chicken and leek soup
Cheese and pickled onions
D steak, mushrooms, courgette and coleslaw
Strawberries and cream
Will be having my usual carb free hot chocolate to take to bed.
Saw a great idea for a low carb "treat" today, courgette crisps! ! Going to make some tomorrow, 100gm courgette is 25gm carb
Slice them up, brush with oil, sprinkle parmasen cheese on and bake until crisp!! Saturday night treat I'm thinking!
