What have you eaten today?

B: yoghurt cream and blueberries with a sprinkling of almond flakes
L: mixed salad and rather a lot of cheese which I finished off during the course of the afternoon
D: scrambled eggs with a few baby plum tomatoes
Snack: crispy bacon strips

D steak, mushrooms, courgette and coleslaw
Strawberries and cream
Will be having my usual carb free hot chocolate to take to bed.
Saw a great idea for a low carb "treat" today, courgette crisps! ! Going to make some tomorrow, 100gm courgette is 25gm carb
Slice them up, brush with oil, sprinkle parmasen cheese on and bake until crisp!! Saturday night treat I'm thinking!

Like the sound of those crisps!
 
New to this:
Strawberries, Greek yogurt, seeds
2 egg omelette, 15g cheese, lettuce, cue, pepper, toms
Chicken breast with pesto, cabbage, leek, pepper, broccoli
Apple, packet of crisps
Lots of water, 3 cups of tea (1 with almond milk)
Welcome... Bravo... But crisps? Blimey... and pesto is high in carbs I think? Apple should be small or 1/2... :) Maybe you have meds, which keep you on the straight and narrow though... Do you test before and 2 hours after? I sound so nosy and bossy - sorry, don't mean to be... :oops:

Love the courgette crisp treats - definitely trying those... :) You could use them as crackers to pile stuff on? :)

I haven't had any advice yet and not on any meds, having a wait of a month for my first appointment at the surgery. The Pesto is 4.5% carbs of which 2.6 is sugars, I had a large teaspoon. Crisps were a bit of an error! But a small packet. The apple was probably medium sized.
I have taken it upon myself to purchase a meter and start testing, I was 13.6 in the morning (fasting - which is the same as my fasting test with the GP a week ago), it was 12.8 before bed and this morning 13.8?? Why did it go up over night?
Nosey is fine, if it helps me!! ;) I have now lost half a stone since I saw the GP 12 days ago - down to all the things I haven't eaten - bread, cakes, biscuits, pasta, potatoes, chocolate, cookies. And I don't normally eat crisps, I don't actually enjoy them.

Those (crisps) sort of "Oooops" moments are almost a right of passage in this diabetes game. By it's definition, trial and error involves a bit of error. :) Now you have a meter, you're on the fast-track to enlightenment. There'll be some surprises and some absolute shockers, but we need to uncover those to be honest. That's how we clarify what we, as individuals, can or can't eat and drink.

My bloods were pretty high at diagnosis, but thankfully my Docs wanted to see what differences I could make without medication. I've never taken any meds, so have a decent month and you may be able to stay off meds too.

Saw this in dr bernsteins book, processed cheese slice toasted 'til it bubbles( on greaseproof paper) then in freezer for a minute, makes great " bread"

Hi Clive :)

I do something similar with Edam. Put slices on greaseproof paper, sprinkle with salt, chilli and garlic powder, bake for 6 minutes then leave to cool. Makes virtually carb free "Doritos" for shovelling salsa and guacamole.

Something breakfasty would be good :)

I'll start off with these yummy pancakes, I eat these all the time :joyful:

Chickpea flour pancakes (also known as gram flour )

These are delicious and filling, can be eaten hot or cold. Any leftovers make a great lunch the next day.

Makes about 8 pancakes

1 1/2 cups chickpea flour
1/4 teaspoon baking powder
1 cup cold water
1/2 teaspoon salt or to taste
Pepper
1 teaspoon garam masala or any spices you fancy
Juice of 1/2 lemon (optional)
1/4 cup yogurt ( optional)

Add all the ingredients into a large bowl and whisk to make a pancake batter consistency. If it feels too thick, add a little more cold water.

This is optional but I like to add veg to the above batter...
Eg, finely chopped pepper, onion, spinach and grated cauliflower.

Heat 1 teaspoon of oil in a frying pan, keeping heat low - med.
Add about 2 tablespoons of pancake mixture, fry on both sides until golden brown.

Enjoy

Here's one of many variations of my delicious green smoothie.

Anti inflammatory Pineapple, Almond, Green Smoothie

1 cup of almond milk or coconut water
1 cup fresh or frozen pineapple
Handful of spinach
Handful of kale, stalks removed as they can be bitter
1/2 courgette
1/2 dessert spoon each of chia seeds, flaxseeds and coconut oil
1 inch piece of ginger
Pinch of cinnamon

Add liquid to blender, top up with rest of ingredients and blend for about 45 seconds or until smooth. Timing will depend on your type of blender.
I love cold smoothies so I usually add a few ice cubes into the glass

Here's some ideas to make green smoothies, I thought I'd start off by posting a few ingredient ideas that I've tried. I'm no expert and I'm learning all the time :) So please feel free to add whatever takes your fancy and agrees with your blood sugars. I try and stick to 80% vegetables & 20% fruit ratio, and find this does keep blood sugars within range. However, I have experimented with 60:40 ratio and it all depends on choice of ingredients as to whether this causes a spike or not... So please test test test.
Eg 1 orange in a green smoothie spikes me but might not effect someone else's blood sugars! Yet I'm ok with banana, pineapple and coconut!
I know it's weird!!! :rolleyes:

Green Smoothie Ideas

Liquid
1 cup or 250ml of unsweetened almond milk or water or coconut water
Adjust liquid amount to your desired consistency.

Choose a minimum of 3 from this list
Handful spinach
Handful kale... remove stalk they can be bitter
1/2 courgette
1/2 cucumber
Few romaine lettuce leaves
1 peeled carrot, chopped up
1/2 pepper
1 celery stalk
1/2 avocado
Tomato

Choose maximum of 2
1 pear
1 Apple
1 peach
1 nectarine
1 cup of any berries, fresh or frozen eg, strawberries, raspberries, cherries, blueberries
1 cup pineapple, fresh or frozen
1/2 banana fresh or frozen
1 cup any melon

Next some Optional extras.

1 teaspoon Chia seeds
1 teaspoon Flaxseeds
1 teaspoon Coconut oil
1 teaspoon Fresh ginger
Small piece of lemon
Small piece of fresh aloe vera gel
Few Mint leaves
Few parsley leaves
Few coriander leaves
Few ice cubes

Then Sprinkle on some optional spices

Turmeric
Cinnamon
Nutmeg
Mixed spice

Add liquid to blender, top up with your chosen ingredients and blend till smooth.
Times will depend on your blender but about 45 - 60 seconds, should be suffice.

I'd love to hear about your green smoothie combinations, what ingredients work in our favour and which don't.

Sausage, bacon (2), poached egg, tomato (eating out so went for the all day breakfast - hold the beans and toast and only 1 sausage please)
8 almond, 8 cashews (cinema snack)
Steak, pepper, tender stem broccoli, mushroom, mangetout
Water, water, water
One cup of tea, and sampled rooibus tea
 
B: chicken liver in horseradish with 2 fried eggs. Green beans. Mr B has asked for this again.
L: HUGE salad, incl greenery, feta stuffed peppers, olives, coleslaw, cherry toms onion, mozzarella, sliced ham, crustless quiche
D: chicken thighs in jerk paste and butter, with onion bhaji and caulicheese on the side. A coyo.

No green smoothie. :( I missed it.
 
B: 2 Boiled eggs with wholemeal soldiers
L: Sausages wrapped in crispy bacon. Homemade beef broth as it was freezing when I came back from my walk
D: 2 Chicken breasts and veg
S: 2 slices wholemeal cheese and toast as BGs were 3.6 mmol/l to get through the night
(2 emergency digestive biscuits are on hand but not tempted lol)
 
B: 2 coffees with cream
L: managed to get some raspberries today, there seems to have been a shortage of them for some reason and I've missed them - yoghurt and cream with a sprinkling of flaked almonds
D: ham and cream cheese rolls with mixed salad, yoghurt berries and cream for afters
 
B: Cheese & mushroom 2-egg omelette with extra butter
L: Leftover butternut squash & beef mince bake
D: Cauliflower cheese with bacon, broccoli & cabbage (white sauce made with buckwheat flour)
The last one spiked me from 5.8 to 7.5 in two hours, drat it. Too much skim milk in the sauce I guess.
