What have you eaten today?

So it's OK to put Coconut Cream in a curry, say? I've been avoiding it. And can I drink coconut water then? I love the stuff but it's been off my list, too.

Mind you, I had my first Indian meal since diagnosis last night. My friend ate a low carb meal with me, so we had sag paneer, bindi, fish curry and kofta. I had one chapati but realised afterwards I could have done without. It was delicious and a real treat!

I use coconut milk/cream in thai curries and seems o.k on my BS, however, their carb contents seem to vary greatly. I am currently using the hard blocks that you melt in warm water, the carbs are higher but you don't need to use a lot and it's watered down when you add liquid.
 
Reagrds the coconut oil, I think I was thinking / supposing it comes in liquid form but am unable to find that on net...most descrptions or sales are of the solid stuff that melts when heated, BUT I was wanting to measure out , say a couple of tablespoons oil and looks like I may need to warm the whole jar to do so effectively, ( as when trying to dig out with a spoon last night possibly took out too much )
 
Yesterday, I had:

B: Green tea n lemon. 1 minute flax bread, toasted with butter and peanut butter.
L: Leftover veg stirfry with tin of salmon and cashew nuts
T: 3 Rankin's sausages, carrot and suede, green beans , mayo and mustard. Made a creamy topping for some warm raspberries, from a bit of cream cheese, some lactofree, a dollop of yoghurt and stevia - surprisingly nice, topped with cinnnamon.

A few brazils at bedtime.

Drinks: Water and 1 tea with lactofree

You know what, sometimes I marvel at just what we low carbers can eat if we think about it. This forum is so useful for that. I used to think there was nothing I would ever be able to eat, but this thread has changed all that. I actually think I eat more than I used to before, I certainly eat a much more varied diet - before I just used to fill it out with bread, potatoes, rice and pasta - quite bland when you think about it. And I used to avoid fat like it was the plague. Thanks folks, for sharing your ideas :D

I believe you can only get it in solid form. I weigh mine though, I think 15g is roughly 1 tablspoon. If you get too much, you can always put some back

That sounds like the perfect meal... envy you... :) Might have to make a Goan fish curry tomorrow.... lush... Full fat coconut milk and cream is what you should be eating... not the chapati so much though... :) if it was a wholemeal one there's plenty of fibre on the other hand and they're not huge.... Coconut water is wonderful and a great re-hydrater, but it does have a natural sugar content... I ration myself, but you need to test to see what it does to you... you might be lucky and be able to drink it whenever you like... I tend to test everything... :(

It melts at 25 degrees or something... I use a butter knife to scrape the oil flat in the tablespoon measure... I don't mind how much I eat though... :) But I've just seen that TweetyPie weighs it out... good idea... :)

We were all the same I think... :) Nice, isn't it?
 
B: German smoked cheese, 3 baby toms coffee with cream
L: homemade frittata with rocket and leaves, 2 sticks of celery. Had an avocado about an hour after as I was still peckish
D: probably ham and cheese rolls with some salady bits chucked in, and yoghurt berries and cream later.

I keep forgetting about the coconut oil, I keep meaning to try it in my coffee - will give it a go tomorrow
You need to put butter in too, then whizz it - it comes out like cappuccino... :) lush....

Last April I had my saliva gland taken out in my neck, and duct coming into my mouth under my tongue so yeah I can also relate to it as I was scared about nerve damage, strange that we have both had salivary problems and duct removal within a year, albeit hers are worse!

Good to hear that your wife is doing well. Xxx
 
Breakfast scrambled eggs spelt toast
Lunch cheese leek frittata and coleslaw and salad
Snack soy cappuccino and 2sq dark choc
Dinner still debating. In need of inspiration. Probably steak.
 
Try ironing while you're watching - or - listening to the cricket on Five Live - you won't even notice it... :) trust me...
Use the drier then you won't need to iron at all. I believe electricity consumption works out less plus you have time to do other things
 
I cannot believe how quickly Lent has come around again... :eek: It can't be a year, surely? It will be a long six weeks till my next glass of red wine... :( How will I keep my numbers down if I want a spoonful of pud or something? :rolleyes: On the upside, I will feel very strong... hmmmm.... :smug:
Don't do lent, and I think we are all giving up enough 24/7 anyhow ;)
 
You don't have coconut oil in your smoothies? Or to cook with? Or to bake with? Or to put in your Bullet Proof coffee or hot chocolate? It's lush.... :) And so good for you...
I don't understand Bullet Proof coffee, besides it sounding quite disgusting whisking butter into coffee (or coconut oil) :eek::eek:
 
Breakfast - black coffee, handful of mixed nuts and full fat greek yoghurt
Circuit training, water
Snack - unsweetened chai tea, 50g camembert cheese, and 2 squ dark chocolate (this is unusual)
Late lunch - 15cm slab of homemade cauliflower bread with cheese topping, green olives with almonds, white coffee
Snack - teaspoon of peanut butter, benecol drink and finely chopped clove of garlic (my only meds), pot of tea
Running training - 75minutes with the club, water
Dinner - v.low carb homemade sausagemeat loaf, salad, glass of red wine
