Beetroot

So I seem to have developed a craving for beetroot specifically pickled lol

What's your thoughts on beetroot

According to love beetroot dot co dot uk it's
7.6g of carbs per 100 g
Of which sugars are 7g

It also has this to say

Lowers cholesterol
Beetroot contains soluble fibre, which has also been shown to have cholesterol lowering capabilities. It also contains carotenoidsand flavonoids, which help prevent LDL or ‘bad’ cholesterol from being oxidised and deposited in the arteries.

Stabilises blood sugar
Beetroot is virtually fat free and low in calories. Although it has a 'medium' GI (Glycaemic Index) of 64, It has an extremely low GL (Glycaemic Load) of 2.9 which means it’s converted into sugars very slowly and therefore helps to keep blood sugar levels stable.

So what do you think

Oh yes I have it always in my salad.
It is quoted as one of the new super foods, whatever that means!

Finding new foods to eat is the adventure in testing.
I have discovered I like spinach, not cooked but as part of a baby leaf salad.

I have grown to love full fat yoghurt, that fills you so much. Even though I don't do dairy. Go figure!
 
I'm sorry I don't know, but I thought I'd add my eulogy to beetroot. I love pickled beetroot, but I've noticed that some pickled beetroot is sold in sweet vinegar, so I avoid that. I grew beetroot in my veg patch last year, and it wasn't difficult to grow. I like making beetroot soup from chopped onions and beetroots, fried gently in butter, before adding vegetable stock cube, seasoning and water. I had a feeling that beetroot was going to be high carb? Because a root vegetable like parsnips, carrots etc, .... but perhaps not.

My sainted mother used to grow and pickle her own beetroot many years ago I ember she always used a spiced vinegar and very nice it was too

Beetroot juice has been shown to help stabilise blood pressure.

Brilliant stuff.
It also confuses HCAs because it makes your pee turn pink.

Even with those very tempting benefits... Nope.

Mind you, it's bearable as those little shreddy bits you get in green salad.

It's a bit carby (10%) but I feel it's good for me so I grow my own and pickle them in vinegar and xylitol sweetener. In a salad I reckon the carb load is spread ok for me.

Love beetroot, we just buy the Vacuum Packs, cost as little as 50p in the budget supermarkets.

i stole some beetroot from the shop and i was caught red handed
 
Friend of mine with MS swears by beetroot. She follows the Wahl protocol for autoimmunity control while low carbing. Google it.
