Beetroot

You'd have problems eating fresh beetroot any other way than raw. Or am I missing something?
I think the poster maybe means not pickled rather than raw .. With fresh beetroot I pop it foil and bake it in oven till tender and skin runs off then eat it as salad veg or hot with sausages or cauli topped shepherd's pie.

Beetroot can be very nice grated in a salad with cabbage too. Obviously not the pickled variety though.

Baked in the oven or fried in olive it's lovely with feta or goats cheese.

Does anybody grow other colours? I grow yellow beetroot and the Italian variety. And a couple of the usual red ones too.
 
I have beetroot and banana smoothie with some kale in for breakfast every morning, and I feel great all day

Drink the juice, a good one is 'Beet it'.
Put beetroot in green smoothies, they become brown smoothies.
Roast beets delicious.
Beetroot soup, grated in salad.
Chilli flavour beets, mashed beets.

Best of all my local dish Scouse with pickled beetroot.

Most fun is had with the pink pee though when you have annual review and have to provide a urine specimen. They always think something is wrong even when I tell them it is the beetroot.

fresh beetroot has the original op's listed benefits in its raw state but not when it is cooked. eating it any other way by cooking it takes away up to 60% of its nutrient value. i mention raw because it is better to eat raw food that is rich in nutrients, fiber and slow release carbs
 
I like beetroot and am relived it's not another thing I have to walk by in the supermarket but I draw the line at eating it raw.
That said there's been some good suggestions in this thread on different cooking methods which I will try out in due course.

I was too polite to mention that. Also it is usually a pee specimen they want not the other, but could have fun with that too.
 
I adore beetroot, such a wonderful taste, texture and colour.:) Recently I bought some little pots, X6, of kids yogurts and 3 were raspberry and beetroot, lovely too :hungry:
 
OMG, not with my teeth I can't :oops:
Blending it is a good way to get it into the system i have a fusion booster by jason vale, pulps it all into a nice drink if you mix it with springwater and half an apple and it keeps all the fiber.
