It does get really hard at times. When you've tested out your meals a few times and found what is ok for you do you write them down? That way you'll always have a record of what you can eat without thinking too much about it. If you can keep a store cupboard of ingredients that will make some of these foods quickly that can help too. If you like frittata they are quick and easy to make .... most of the ingredients I use are in the freezer (frozen veggies) eggs and cheese always in the fridge..... omelettes are quick and easy to make too - cheese and mushroom for example... If you bake try some of the low carb recipes out
