Here's a new one - low-carb BLT:
4 large eggs
4 slices streaky bacon chopped, fried till crisp and drained on kitchen paper
1 iceberg lettuce
1/2 cup (4 fl oz) ranch dressing (whatever that is - I use mayonnaise)
2 chopped tomatoes
1/2 cup (?) blue cheese, crumbled - feta is nice too...
salt and pepper
Place eggs in a pan, cover with cold water, bring to the boil and cook for 1 minute; put the lid on the pan and remove from the heat... 8.-10 minutes
Put under running cold water and peel when cool - dice....
Cut the iceberg into 16 wedges
Top the wedges with mayo (or ranch dressing), tomatoes, blue cheese, bacon and egg, and season with salt and pepper to taste...
