I find a big protein meal will darken the urine significantly.
So can dehydration.

As for the smell, I find that anything I have eaten can affect it.
A cup of coffee in the morning, and my 11am pee smells... almost astringent. I assume that is the caffeine. Or one of the other 300 chemicals in coffee. Spices, garlic, tomatoes even, will have their own effect.
Asparagus is not good (understatement), while pineapple is very sweet. Not that I have pineapple often nowadays.
