Fathead Pizza Dough

Another one to try @chrisbug is chefjohn on you tube, cauliflower base pizza. I prefer it to the fathead ones, I think possibly because I like to see all the cheese on top!

I watched Chef Buck's(?) tutorial, and he dries the cauliflower rice out in a pan, It seemed a lot quicker to attempt that method for me (happy to stand corrected on the reducing the water content method)
Anyway, it was great! I think the protein (from all of the meat I piled on) had a delayed reaction on my BS, but quite manageable. I need to find a hard cheese that tastes less cheesy if that exists?
