Thanks! If I make it tomorrow - which I probably will (especially if I make my own tomato sauce as I only bought a small jar on Tuesday!), it'll have leftover meatloaf in the middle.Not a recipe as such. I just sliced 2 aubergines, fried them in lard/butter until just soft them layered in an oven proof dish with jar tomato (pasta) sauce. The middle layer was the sausage meat (also pre fried a little). Very top was thick layer of grated cheeses (mix of whatever was in fridge)
So layers were tomato, aubergine, meat, tomato, aubergine, tomato, cheese.
Bake until soft and bubbling.
Even better if cooked ahead and reheated
For today, I had overnight oats for breakfast, with the end of the milled flaxseeds. I really do prefer chia seeds in my oats, I think. I might also add sunflower seeds, which can alternate with walnuts. Then for lunch I had the last Cornish pasty and an ice lolly, and supper, which was early as I had a Local Preachers' Meeting, was leftover vegetable stew, to which I added a small tin of peas, and a small tin of chickpeas which I blitzed up to thicken it. I think half the tin blitzed would have been enough, and the rest left whole. I'm still experimenting... but then, I always do! Followed by kefir yoghurt with fresh raspberries. In the morning went to tai chi practice - our instructor is recovering from an operation and her replacement (whose style doesn't suit me) was unavailable, so a few of us practiced together in the park. Most enjoyable!
