"What have you eaten" Parallel Chat

Not a recipe as such. I just sliced 2 aubergines, fried them in lard/butter until just soft them layered in an oven proof dish with jar tomato (pasta) sauce. The middle layer was the sausage meat (also pre fried a little). Very top was thick layer of grated cheeses (mix of whatever was in fridge)
So layers were tomato, aubergine, meat, tomato, aubergine, tomato, cheese.
Bake until soft and bubbling.
Even better if cooked ahead and reheated
Thanks! If I make it tomorrow - which I probably will (especially if I make my own tomato sauce as I only bought a small jar on Tuesday!), it'll have leftover meatloaf in the middle.

For today, I had overnight oats for breakfast, with the end of the milled flaxseeds. I really do prefer chia seeds in my oats, I think. I might also add sunflower seeds, which can alternate with walnuts. Then for lunch I had the last Cornish pasty and an ice lolly, and supper, which was early as I had a Local Preachers' Meeting, was leftover vegetable stew, to which I added a small tin of peas, and a small tin of chickpeas which I blitzed up to thicken it. I think half the tin blitzed would have been enough, and the rest left whole. I'm still experimenting... but then, I always do! Followed by kefir yoghurt with fresh raspberries. In the morning went to tai chi practice - our instructor is recovering from an operation and her replacement (whose style doesn't suit me) was unavailable, so a few of us practiced together in the park. Most enjoyable!
 
Planning on making a pork and veggies slow cooked casserole for dinner today. It was cold and wet on my early garden walk this morning and made me feel more like cold weather food!
Out all day yesterday so lots of catchup stuff to do today.
Hope everyone has a good day. I'm still working through the last batch of fresh tomatoes ( freezer is full of them!) So a few tomatoes will be roasted in olive oil for breakfast served on LC toast. Hope everyone has a good day.
 
Just had breakfast of about 1/4 of a cucumber - eaten like an apple - and a few teaspoons of cottage cheese. A digestive biscuit. Tea. Can't let BG go too low this morning - it's legs day and BG usually drops on Thursday morning while I am getting my bandaging done. Also need to make sure I have my emergency biscuits with me.

2nd meal - I'll have to do something with those leeks - I didn't bother yesterday after all, I just had some more bits of ham, cottage cheese and RyVita. Enough to put my BG up nice and high so that it would last all night.

These pills are surprisingly effective. I've reduced my basal insulin by 8 during the week (49u to 41u) and taken no bolus doses at all. This morning I found that I've lost 2.9kg this week as well. I wasn't expecting any results for weeks yet, the dose I am on is so small.

Maybe you could do that dish where you wrap the cooked whole leeks in ham, cover with a Bechamel sauce, sprinkle with grated cheese and bake for 20 minutes or so. Hmm, might do that tomorrow night. Tonight will be leftover meatloaf baked into aubergine (thanks, @MrsA2). Just had overnight oats with blueberries. Why do I like them when they've been frozen, but find then tasteless when raw? I eat them if they are there, but don't buy then raw very often.
 
That's brilliant @Annb ! Thank goodness they let you try it. Mounjaro has been great for me, BGs have been steady and I've lost 10kg since January on the lowest dose so hopefully I can go up a dose after my diabetic review next month.

Back from the clinic now. I didn't go into any shops. The weather is foul today and I stayed in the car. I think I'll make some leek soup - it's that kind of weather. Brrrr!

Picked up my new meds on the way home so we'll see what effect they have on these funny hands of mine. Funny, as in odd, and why wouldn't I have odd hands? Everything else is odd about me. :happy:
 
Discovered my sunflower seeds had been invaded by the pantry moths, and were no longer edible. I have put up a pheromone trap and it attracts them within minutes - needs another clean one, I think.

Haven't been out today, other than a quick dash to Lidl, who had what they described as a "ploughman's quiche" reduced to half price, so we had half of it for lunch, followed by a little ice cream (Dubai pistachio - rather nice). This morning I unmoulded my soap and cut it into bars, but there were a lot of tiny bits, so I put them all into a jamjar and added some rosewater and then put them into the microwave to rebatch. Only I left them too long, and the jar boiled over. At least I only had to wipe down the inside of the microwave - it was already soapy!

I made the baked aubergine dish for supper with the end of the meat loaf, the end of the halloumi and some Parmesan. I did use a bought sauce in the end, largely because cutting up the soap took longer than I thought it would, and I didn't have time to make one as I would have liked. I served it with half an olive foccacia from LIdl, but discovered, too late, too late, that I have some jollof rice in the freezer, which would have been perfect for it. Then we finished with a fruit yoghurt - mine was blueberry - and now I am exiled from the bedroom while my husband has a Zoom meeting. I have got ready for bed, although I have no intention of going there. Insides have been a bit moody today, but not as bad as sometimes!

I, too, have lost 10 or even 11 kg since January, when I started to weigh myself regularly, and probably 5 or 6 kg before that! Semaglutide FTW, as they say! And it keeps my blood sugar steady, and the idea is to find out whether it will protect me from having a heart attack or a stroke. I did read somewhere that metformin may protect against Alzheimers, so I could live as long as my mother, and my grandmother before her (she was 101 when she died!).
 
Still can't shift this sinussy headache, though tooth seems a bit better yay!
Scrambled eggs for breakfast before double dance class.

Contents of a lidl egg mayo and bacon sandwich (ditched the bread). 2 slices ham and a small bit gouda.

Hubby cooked tonight. He tried hard as he thinks he's in the dog house (he even gardened yesterday without having to be asked!). Waitrose meal deal so he picked baked camembert starter (except it was in fried breadcrumbs), chicken forestiere (very rich) and cauliflower and broccoli gratin (again very rich).
Would have each dish again, but in separate meals and would add fresh veg to each. Trouble is I can't tell him that as he'd take it as ungrateful criticism .

Local village show this Saturday, not sure I'll have anything to enter, maybe raspberries and a buddleia that's produced a second flush, but rain may yet scupper that.

I also may make some fish pate for lunch - using tinned mackerel or sardines in olive oil blended with some seasoning, lemon juice and some horseradish for a bit of kick. I've got a packet of LC seed crackers in my store cupboard left over from M and S although I can't find them on the shelves of a couple of nearby M and S stores again - Hope they haven't been discontinued!
 
Breakfast: raspberries and cream. Then a couple of Jacob's crackers. Caro.

2nd meal: will be chicken and mushroom in a cream sauce on some keto orzo.

That's if I can be bothered. Very tired today.

EDIT: I did bother at 4.15 pm and I've just put it on to cook. I'll have it about 5.30. Nothing after 6 pm so I can take my tablet when I wake up.

My mother made - I expect she still does when my sister lets her in the kitchen - fish paste with leftover salmon or trout, cream cheese and a tiny scrap of tomato paste for colouring. Plus seasoning, of course. She always said it was trout paté, and used to get very offended if we called it fishpaste, so of course we always did call it fishpaste, and I notice she does herself these days! One of my aunts used to make sardine ice-cream as a starter for dinner parties, can you imagine? I didn't care for it, but her daughters all liked it.

As for me, I had overnight oats for breakfast, asusual on a weekday at home, today with the dried fruit compote I made yesterday; lunch was another bit of quiche and a mini-ice lolly, only I was still hungry and really fancied some cheese, so had a fig, and then some dark chocolate, but they didn't distract, so I gave in and had some cheese! No wonder my weight is going in the wrong direction! Supper is going to be leeks rolled in ham with a cheese and parsley sauce. First of all, I was putting the leeks in the microwave steamer and totally failed to notice that the bottom part wasn't there. Result: boiling water all over the floor. Then I decided to try the tub of parsley sauce mix I bought in big Tesco in Sussex the other day. You are supposed to use boiling water, and stir vigorously until it thickens. So I stirred and stirred and did it thicken? You guess! Of course, I'd only accidentally used cold water.... but a few moments in a saucepan did the trick.

I expect supper pudding will be natural yoghurt with dried fruit compote, but it might be creme caramel, as we both love Lidl's version, which is cheap and cheerful.

Been out to a wonderful exhibition at a local church, which I enjoyed. May go back.... Then went to Tesco's, and have slept most of the afternoon. Need to make more soap - only one batch, which will be a lavender soap, for the benefit of those of my family and friends who are vegan and don't use goats' milk soap. I colour it with alkanet root, and have been soaking some in sunflower oil to do just that, and must go and make the soap in a few minutes. At least supper is ready, except for mashed potato to go with it, and only needs to go in the oven. If I have the energy, I'll do some green beans as well, so that they can cook in the steamer on top of the potatoes.
 
I did a tip run today and got rid of my cardboard mountain (the boxes that are too thick to shred in my paper shredder - I shred all the normal amazon ones for compost) and a few bits and pieces that I've been umming and ahhing over for a while. They went to the "useful" area for someone to take if they want it. I don't have the confidence or energy to sell things, and none of it would bring in much to make the effort worth it.

I even ventured into the storage cupboard and actually there's not much now to clear out, so I must get that finished and then finally organise what I'm keeping in a more user friendly way. The old way was create a huge unstable heap and then when I need something, pull it out like a game of giant clutter jenga, causing an avalanche. I think it's probably a year since I started clearing it out :hilarious:

The shed is also in need of a declutter, I need to get rid of an old wooden/canvas parasol which is huge and now rotten, why do I keep things like that? Some other old and defunct things need to go too.

I must declutter much of my wardrobe as the seasons change, and I need to think what I'm going to pack when we go away in ten days' time. I hate decluttering! I also need to throw out those summer tops I haven't really worn this summer; as i have lost weight, some of them swim on me and don't look good. Others, while still too big, look good.

Meanwhile, we are planning a trip to Vienna over Christmas; we have no plans as it's the year my daughter and her family go to her in-laws, and my sister's children usually take up the spare beds in their house. Okay, we could go down and sleep in the motor home (which lives down there - we rent a garage from my brother), but it's good to have a change. Although my mother will not have many more Christmases....

I did mashed potato with our leeks gratin, but mixed it with cauliflower to lower the GI. Slight failure, though, as I mixed in cottage cheese which wanted using instead of the usual butter and milk, and it didn't really mix. Tasted good, though, and very filling. Also did green beans. We finished with creme caramel. It was lush!
 
Busy, bitty day. Frustrating as couldn't get access to village hall until this evening to start setting up for tomorrow. Felt like a lot of waiting.

Fitted in a walk, ate some scrambled eggs, and a couple of sausages, and some cold chicken and a cup of bouillon. Can't quite remember in what order. Finished with a late bowl of ff greek with chopped almonds and 1 sq 85%

@jpscloud I'm trying to use cardboard boxes in garden as a mulch/weed suppressant. The layer I put down in June has already been broken down by worms so am going to try it over winter too. Mainly in my fruit cage as it's not visible from the house
 
@MrsA2 it's quite magical how soil life processes cardboard isn't it! I just had rather more of the very thick stuff than I could use in the garden, and some plasticised cardboard which I can't compost.

It's a showery day again here so I might tackle my clothing declutter job today. I've lost weight then gained it again so many times that I stopped throwing out clothes as my size changed, and I'm still not confident that I won't regain weight! I do think GLP1s are the game changer though so I will get rid of some clothes that really are too big now.

The guy we used to help us to remove the rotten decking is booked to come back this morning to finish repairing the shed - the decking was alongside the shed so some of lower slats of the shed are damaged because the decking was holding damp. He didn't have time to sort it all in the initial job. Will be good to have it fully dry and I've decluttered it so it should survive another winter.
Just picked some more raspberries they have kept going this year. I'm also dehydrating some blueberries from frozen today to use in baking - you just need a few and they look like currants - great in scones. Dinner will be a slow cooked curry.
 
Not a good day today; have been feeling rotten all day and spent much of it in bed. Breakfast was a fried egg on a mini-wrap spread with paté, freshly-squeezed orange juice and coffee; lunch was the inside of a bacon, avocado and tomato roll - I just nibbled on the bread, but really didn't fancy it - followed by a tiny scoop of ice-cream with a dollop of creme fraiche, and supper has just been a sausage, beans (Heinz now do a tin of 5 beans in tomato sauce, which are really rather nice), 2 carrot sticks, a little courgette and a spoonful of mashed potato. Followed by yoghurt and dried fruit compote. Going back to bed in a minute, and hope I feel better tomorrow - I'd have need to, as I'm preaching at 10:30!

I've really perked up today, I hope it lasts because I need to take advantage of the nicer weather we have coming up in the next few days.

There's another cauliflower ready to pick and some others are not far off. My patio apple tree has seven really big apples ready too, they are a dual purpose eater/cooker. I'll make them into apple sauce without sugar, freeze them and maybe make some bran and apple muffins for a treat.
 
@Mrs Redboots hope you are feeling better today. @jpscloud well done on your apples - I usually get a few from a local farm, must go on a walk that way soon ,they collect for charity selling them so it's a win win. Our shed is repaired now so going to finish off it's final coat of paint today to protect it.
I'm planning on roasting a chicken today with a few sausages to serve with it. Thinking it's cool enough to roast some veggies too and save the salad for the leftovers tomorrow. Hummus planned for lunch but may do a cooked breakfast as a Sunday treat.
@Annb hoping you are doing okay - missed you yesterday.
