"What have you eaten" Parallel Chat

Getting further with my scan results. After my phone call yesterday, I now have an entry on my on line hospital results saying MRI spine pending til 11th Nov. It means the results are done but as a patient there is a 2 week delay. Hopefully my GP will get them sooner and he promised to contact me when he does.
Dinner today BBQ ribs with Brussels, broccoli and carrots.

Sounds promising let's hope that your GP reports back soon.

@Annb hope your appointments yesterday went well and you are not too affected by your jabs.
I am hoping to do some more low carb baking today - made some delicious pumpkin spiced hot cross buns yesterday but needed a medium orange and a small apple for the recipe, neither of which I had so also had to walk into town to buy them and I got soaked, bad timing! I got a couple of oranges - as probably making a low carb tea loaf today which also uses a small amount of zest and juice.
Main meal plan today is a chicken and veggies meal. There will be a LC pumpkin spiced bun for lunch eaten with some cheese and I may roast a few tomatoes this morning for breakfast to serve with a poached egg.

Lovely bright day today may manage to get some clearing up done in garden of the debris - mainly leaves and branches - that's arrived during the storms now the wind has settled down! Have others been influenced to build up their supplies by the recent campaign to do so? I'd imagine @Annb it's second nature to you because of your Island supplies always being vulnerable. We only have electric for cooking and didn't want not to be able to have a hot drink if there was a long power cut so have just purchased a Kelly Kettle which you can power with twigs, leaves etc sounds ingenious - I'll give it a try out in the garden when it arrives! I'm sure some reading on here will have tried one while camping. I didn't want to buy and store any camping gaz.
Planning on roasting some tomatoes for breakfast to go with a poached egg, some cheese for lunch and cod with veggies for dinner. I also need to start baking again - building up my low carb baked goods freezer supplies now that my freezer is clearer after our weekend family visit. Colin the Caterpillar - youngest sons birthday cake - which had to be frozen a few weeks ago when he was poorly, froze well but had lots of packaging and Colin needed almost a freezer drawer to himself! They also took the leftovers of Colin back home with them thankfully.
I just ordered a large stainless steel water container which should hold enough water for 2 of us for 3 days. One of the reasons we didn't like the bottled water from the supermarket is that they only seem to have plastic bottles and, after a while, it is easy to discern the plasticky taste in the water. I was looking for glass containers, but the larger ones take up a lot of space. This st steel one looks to be more compact, but still holds 17L. Just wondering whatever happened to our milk churns. They would have done the job, although they didn't have taps. Must have given them away.

Our fall back cooking is on a camping gas stove, and we always do have a lot of tinned food in a cupboard - not the larder because it isn't for use except when the shops are short due to bad weather. Also just bought a new electric water heater to replace the little electric kettle I had for one or two cups of water - only about 6 months old, it sprang a leak so it's waiting to be taken to the recycling plant. If the car passes its MOT next week, I'll be looking for new fridges as well (if I have to get a new car, I can't afford a new fridge). Everything seems to wear out at the same time, even if some things are younger than others. I have to admit though that I do keep things for much longer than other people seem to. The newest of our fridges is about 20 years old (and hasn't worn well) and the freezers are a bit older. My oven is 25 years old, my washing machine and tumble dryer are both about 15 years old. In that time, my brother has replaced all the items in his kitchen at least twice. The Scenic is 21 years old. I just don't expect things to wear out.

Porridge for breakfast, then I was out running errands so I didn't have lunch until about 2.30pm. Consequently I'm not hungry yet so tea will be late - curry if I bother at all. Some dry days ahead according to the forecast so maybe the grass will get cut!

Went on a health walk with the walking group I belong to this morning. Sunny weather, crisp leaves under foot in the park all good for mental well being and step count!
Dinner tonight was my Thursday night regular of cheese and mushroom omelette.

Edit for typo.

The grandsons came over today; lovely to see them, as usual. They are both taller than me now, which is most disconcerting of them!

Breakfast was "Best of both worlds" - an oat and chia seed flatbread (or wrap, or pancake) with a fried egg on top. Lunch, out with the boys, was a plate of what's called "Garden bliss" - a vegan plate with spinach on the bottom, really nice hummus, avocado, mushrooms, sweet potatoes, and falafel, sprinkled with pomegranate seeds and some kind of vegan dressing. Absolutely delicious but far too much! I ate most of the toppings, but left almost all the spinach - my elder grandson, who had gone for the same option, ate quite a bit of what I had to leave! Teenage boys really have hollow legs! Supper was half a sandwich (seeded sourdough bread) with hummus and German luncheon meat, and about 1/4 slice of seeded sourdough with cheese. And 3 olives. And I think there is about to be a creme caramel!

ETA How do you get it to insert photos? It won't do it for me - it just says "Oops, we ran into some problems" and won't post.

I just copy and paste. It usually works.

If the car passes its MOT next week
Ooh, we're MOT sisters!
Mine is due on monday and I have fingers, toes, and eyes crossed (that last one not while driving) because I only bought it two months ago and between the last MOT and this one, the previous owner changed some things. Like substituting the dashboard with duct tape.

I know the exhaust needs a relatively cheap repair, which is fine.
On Sunday I'll use more duct tape to mostly close the heating into the interior so there will be enough air flow to the window, at the moment hot air simply blows everywhere, and it also melts the glue from the duct tape...

I had 'zuurkoolstamppot' made with cauliflower mash today on the bridge, very good, and I added some Branston pickles bought in the UK two years ago to the mash, which really works well.
I expected to take over the afternoon and evening for a colleage on the bridge so I left my food for tomorrow on the bridge.
A mistake, my colleague doesn't need me to step in after all, so I'll have the day off and will have to improvise with my food.
Or maybe I'll drive to the bridge for a coffee with my colleague and to fetch my food.
Saturday will be our last day on the bridge for the season, and I've grown fond of this particular colleague, not a bad idea at all. I'll likely be out of a job again until the 1st of April.

Do you use a phone or a computer?
In both cases you'll need to make the image smaller.
On phone, you can adjust things about a picture by tapping the little pencil and choose 'change format' (This may be called something else, my phone speaks Dutch.) Choosing 40% works for the forum.

If you use a computer, there are likely better tricks than mine, but here's my trick: Post on Facebook, only visible for myself. And then I take a screenshot, which automatically makes the picture smaller.
Others will likely have better tricks but this works for me... :hilarious:

Re photos (I use a tablet) I put them through a free photo resizer to make them smaller

Somehow I've missed a few days posting. Nothing new or unusual food wise, there have been eggs, ham and cheese.
Tonight was a bolognaise (no spaghetti) made in the slow cooker...which made its first appearance of the season.
Yesterday was a ready meal which I added 150g ready cooked chicken to. Split it with hubby who had all the rice
Have scoffed a very expensive bar of 72% chocolate flavoured with rhubarb, but in 4 portions over 2 days. Its 4 companions are now firmly locked in the Xmas cupboard

A question for the creative minds:

A long time ago and way before diabetes when I was very poor (due to spending most of my money on my long beaten heroin addiction), one of my go to meals was noodles with a topping of 'sambal badjak' (Indonesian hot sauce, very flavourful) mashed with an equal amount of butter.
I'd love to eat something like that again, for the flavour, but it's also very cheap and quick, and I'm a lazy cook at times.

Can we think of some vegetable or whatever to make this work?
Cabbage?

I use cabbage a lot as a replacement for noodles or pasta. Some of the whiter ones can be quite bland, or a shredded Savoy (dark green crinkly leaves) does well to hold a lot of sauce..

BTW, I loved the pic of your duck taped car! Only you xxx:)

Or what about turnips or kohlrabi, or mashed swede or celeriac? Or spread on a flat omelette?

If the APK (Dutch MOT) works out well I may decide to visit the UK again next spring and you can see my wonderful and ridiculous car for yourself over a lunch!

I'll have to think about all those possibilities, but maybe there is a LC variant on cheap spaghetti which will do the job!
It's not needed, I have the money to buy proper food now, but it just popped in my my mind as something I actually liked even if it cost almost nothing!

I would love to attend a meet up with you and others if you come over to the UK again, if that's something you'd be up for! I just wasn't physically able to do that last time you came over, and was sad that I missed the opportunity.

I will keep everything crossed for your car too!

Good luck with your MOTs @Annb and @Antje77 we've also got our MOT next week but on Thursday not Monday.
Managed some baking yesterday - a low carb fruit loaf and a few rolls - but lots to sort today so probably no baking time. It's Friday so salmon for tea as usual.
We know that the brakes need attention - we've been waiting for parts to arrive at the garage for the last couple of weeks. It's also making another little noise which might be in the suspension. That's all that we know of potential problems, so we are hoping all will be well. The only problem that we can think of might be rust in the sub frame(s) or bodywork that we're not aware of. The salty air here is bad for rusting cars.

Breakfast was puffed spelt grains with oat milk (Neil bought some to try and found he couldn't use it). Tea.
2nd meal will be fried fish and a few chips.

Porridge for breakfast, cheese and salad for lunch and beef brisket (freezer find!) with garden vegetables for tea.

I've been clearing out the last of the uneeded/unwanted/surplus to requirements items from the big walk in storage cupboard, and will do a tip/donation run tomorrow if all goes to plan.
