"What have you eaten" Parallel Chat

B: full fat Greek with 8 blackberries and milled seeds
Exercise class, and coffee (tea for me) after. I so love a catch up with friends
L: 2 scrambled eggs with a little cheese
Errands including a hair cut, frustrating parking as a town car park is closed for repair, brightened by a bargain in Waitrose, mini pumpkins reduced to 10p each so bought 2 white ones.

Cut in half, drizzled with oil and well seasoned, baked 15 minutes in air fryer, then yesterday's leftover buttery leeks added (rice in hubbys too) back in for another 10 minutes, served with 90% sausages and green beans. Tastier than the bland big orange pumpkin, and looked pretty impressive. Skin was edible too (but not to hubby who got a bit precious about it!) A good dish for 20p!!! Plus sausages
Rewarded myself with too many m&s dark chocolate dusted salted almonds

What a beautiful autumn day it was yesterday. We were rushing around doing caring related stuff - but managed a few mins by a local canal checking out the autumn colours and sunshine. Our nearest large Sainsbury's is right by a canal and needed to pick up things for eldest. It's easier to take that time out when weather is bright rather than wet and grey!
I also had a long call from the Predict Study at Leicester Hospital who are looking at link between diabetes type 2 and heart disease. They have secured more funding to extend their research study and would like me to come back for a further full day of testing -it's very thorough and includes a CAC and a full MRI of the heart. I'm going to sort out a date to go over. Last time was four years ago and I found it interesting and, especially with my high LDL and statin intolerance, found my then zero CAC score reassuring. Will be interesting to see if it has changed.
Food today planned quick breakfast of kefir, LC granola and toast, cheese for lunch and probably burger and salad for dinner. May also make a LC lemon mousse.

Very small bowl of plain low sugar granola for breakfast, added pecans, a couple of bits of chopped dates and a few currants - this might take the porridge spot! Very tasty.

Lunch will be some cheese with salad leaves, and tea will be fish fingers with resistant starch mash, cauliflower and cauliflower greens. I only have a spoonful of the mash, but it really does make me happy. I do get slightly higher BG with it, so I need to keep the portion really small. Luckily it freezes well so I can control portions that way.

I had intended to have loads of swedes by now to keep the carbs lower, but sadly they're small and I don't have many, same with the celeriac. When I've finished the packets of mash that will expire soon, and exhausted my garden supplies, I'll maybe start buying swedes. I still have a few good carrots, but again my second sowing didn't get going and they're so small they're just a salad garnish really! I refuse to buy supermarket carrots though, they're so tasteless.

Of course I faffed around yesterday and didn't get my garlic etc. planted so I'm doing that now!

Our car just failed its MOT - the rear sub-frame is beyond repair and probably can't be replaced. Even if something could be done, we'd be looking at something over £1,000 to do it. That's that then. We have to start looking for another 2nd hand car that will do for the next few years but it has to be one that I can climb into.:bigtears:

EDIT: We might think about leasing.

@Annb I hope you can find a good car at a reasonable price... that's asking a lot these days but we can only hope!

I planted the elephant garlic and shallots, and now just have the regular garlic to get in - there's also some more coming in the post because I wanted to try softneck garlic as well this year.

Busy day so started with 1 cold sausage in case I didn't get anything later, but did manage a second sausage about 10 am.
Then a meeting
Then personal trainer, however brain was still at the meeting and I struggled to concentrate, even simple instructions like "stick your bum out" weren't computing. Found it all difficult, but it helps to have someone else to tell me what to do, and to keep count etc.
Walked home 10 minutes but was still out of puff when I got home!
Lunch with visiting friend.
Hm veg soup, cold meats, prawns, salads etc. Bread for the carb eaters. Did have 2 bites of a very sinful Danish Pastry.
And 2 glasses Prosecco. And lots of chat.
Later was cold chicken and ham on m&s cheese crispbread. And nuts.
Nothing since 5pm.

Been out this evening! Book club meeting in Central London. I wasn't sure I'd get a shower before I left, but luckily the water came back just in time for me to have one, although it was not quite up to temperature! Before that, I'd just slobbed around in my nightie!

Breakfast was "fried porridge" with a fried egg - the flatbread was a bit too dry today, having been too soggy the previous time. I think it was because I used the end of the sachet of chia seeds, and there were probably far too many for the amount of oatmeal!

Lunch was - I can't remember. Oh yes, it was the end of the quiche with the end of the olives, and a stuffed pepperdew pepper. Then I had the last Lebkuche for pudding, and then a few nuts-and-raisins, and 3 dates stuffed with cream cheese.

Supper, in the pub, was a "small plate" of arancini, which were very nice for a change but not quite seasoned enough. And when I got in a few minutes ago I had some yoghurt with stewed plums and a square of dark chocolate with pistachios.

But really good news - the Ascend Plus people wrote and said I didn't have to pause the trial after all, and they would send me the next lot of pills in due course! Result! I'm so pleased, as I really didn't want to have to stop.

Swimming today, getting closer to my usual 1000m, 600m today.
Usual food throughout the day then high % sausages with carrots, Brussels, broccoli, a splash of gravy and apple sauce.

Forgot I have a lunch out today, so it's the low sugar granola with pecans, a few currants and chopped dates for breakfast then whatever grabs me from the menu for lunch and tea will depend on how I feel after lunch.

Hope everyone has a great day!

It's Wednesday so I'll be cooking cod in tomato sauce for dinner as usual - I find it helpful to do the same meals on certain days - helps planning and it's easier than trying out a new recipe - but l like to mix it up too. Slow cooked a celery soup yesterday evening and planning on serving it for lunch next few days. If I get time I may make LC cheese scones to go with the soup.
Wishing everyone a good day. @Mrs Redboots very pleased to hear your news about the Ascend trial and that you've got fairly warm water back.
@Annb feel for you with your car failing it's MOT and hope you sort an acceptable, not too costly, replacement soon.

Neil's gone to town to see what he can see in the way of replacement vehicles.. My brother was suggesting that I just use taxis but if I did that I would be looking at monthly costs of something like £800 - if I only go to medical appointments. Shopping would be on top of that - another £200. Not cost effective. It has to be a car, either purchased or leased.

Alistair has offered to help but his vehicle is a van and impossible for me to climb into. DIL's car is also not accessible for me.

At a pinch, grandson's Dacia is SORNed and sitting on the croft so we could use that, but it is also very difficult for me to get into and I end up hurting my legs and back in the effort to get in. Not a long term solution.

Anyway. I took a st steel container of poached chicken out of the freezer yesterday to use today. It defrosted overnight and magically changed into rice pudding! So I had that for breakfast. At least the starch should have been resistant.

2nd meal won't be chicken after all. Probably some veggie sausages with a defrosted baked potato and some leeks.

Freezer containers have a really annoying habit of doing that, I find!

Breakfast for me was overnight oats with a banana, plums, a few nuts, yoghurt and a little sugar. I've realised why porridge doesn't last as well as overnight oats - I don't usually add nuts to it! Even four or five seem to make a huge difference.

Tai chi was fabulous, as usual, but I've been very sleepy all afternoon.

Lunch was bought ham and pea soup, a sandwich on wholemeal seeded bread with pate and part of a pepper, and my share of the rest of the chocolate nougat ice-cream (which was not a great deal!).

Supper is going to be a special meal, to celebrate the fact that we got engaged 48 years ago today! I've bought a pre-cooked lamb shank (it says "Serves One" on the packet, but that's rubbish - I shouldn't be surprised if there was some left over, even), which apparently comes with mint gravy, and then I shall do a vegetable tray-bake (baby potatoes, butternut, carrots, mushrooms, onions, see what else I have in the fridge) and maybe Brussels Sprouts, too. The traybake can do us twice and be served with halloumi tomorrow. Then pudding will be Lidl's apple crumble - I expect one tub will do between us.

Happy engagement anniversary @Mrs Redboots !

I had very nice cod and chips in the pub, it's one we haven't been to before and it was genuine cod! There weren't many chips, and I bartered some of them for a bit of my friend's broccoli side.

We had a really nice afternoon there and a lovely catch up.

Tea will be a quick sausagy stir fry.

Scrambled eggs for breakfast
Hm vegetable soup for lunch, and half a Pie d'angloys cheese.
Did a freezer audit - nothing masquerading as anything else, but a few items I'd forgotten about so ate a mini ice cream, 1of3 I'd put way when eating too many in the summer
D was leftover bits from yesterday with2 slices lc bread. This was heylos wholewheat, don't like it much

Thank you! The lamb shank was lovely, and more than ample for two (I don't quite see how anybody could eat a whole one!), and the veg were good, atlhough I had to chuck the mushrooms as they were just too old. My husband came in at the right moment so he did the sprouts for me. And the apple crumble was lovely - I really could have eaten a whole tub of it, but that would have been seriously greedy and none left for another day! I don't even want my usual evening square of dark chocolate!

I have my pneumonia jab tomorrow morning, which I am not looking forward to. At least, not the jab itself - that's just a couple of seconds of ouch, and then over - but potential side-effects. Shouldn't be worse than most other jabs, but I expect it will let me know it's working. Fortunately I do have food in the freezer if I don't feel like cooking from scratch, and there are leftover veg that can be hotted up with halloumi.

Car has its MOT today so had to get up early to sort. Now it's just a waiting and crossing fingers day! So will be doing jobs whilst waiting for the verdict to come in......
I'm planning to make some panda flour suet pastry as a topping for a chicken pie. I ordered some keto sous vide chicken packs expecting long dates so they could be stashed in cupboard like tins as a back up but date on them is only end of November so I need to use them. They were on sale at a good price so should have realised there was a catch! The vacuum packs should have at least several months date on them. Still it will give us a chance to try them - if I need low carb ready meals that don't need freezer storage in the future. But they are very costly without the discounts! A few of the packs I bought have Spring 2027 dates so at least will have a few stored!

Good luck with the MOT! And what a bore about the chicken. But what is the difference between keto chicken and that which you buy in the supermarket?

I had scrambled egg on toast this morning, for a change! And have made a Greek-type salad for lunch, and there will probably also be a mini pork pie, and maybe some of the last garlic and parsley flatbread. I've just bought a new toaster, as I discovered that the toast I made for breakfast was only toasted on one side, and my husband said he'd noticed that lately, too. As our old toaster - now on the way to being recycled in Curry's - is at least 11 years old, if not older, I thought it was time for a new one! It has a warming rack, so I won't have to toast the flatbread. Not sure what I'll have on it. And then there is a pineapple, and there is a mango, but if neither of them is ripe, we'll have ice cream as usual!

Had my jab. Thus far I can feel where I had it, but that's about all. Hope there won't be more side-effects (I really don't mind a sore arm, but would prefer not to feel feverish and achey), but have made no appointments for tomorrow, just in case.
