"What have you eaten" Parallel Chat

Just back from my leg appointment. We went a bit early so that we could get a look at the only car (apparently) on the Island within my price range. There are others, but they are all being sold privately. As a family, we've been bitten too many times to go down that route again. This is with the same dealer that we bought the Scenic from in 2015. It's not a new car by any means - I don't have the funds for that. It's a 13 year old Nissan Qashqai. Seems OK - bit of rust but not too much for a car of its age. The main thing is that I can get into it without too much difficulty and the wheelchair just squeezes into the boot. Not exactly a snip at £51/2 thousand, but it will have to do and should last a couple of years anyway. Maybe in a couple of years I can save up for something better - if I'm still around by then.

All this with cars - to buy or to lease - has made me realize just how old fashioned I am. One has to have a good credit rating. Neither Neil nor I has a credit rating at all, since we always use what money we have and don't use credit at all. That appears to make us bad people in the eyes of the business world.

Breakfast was puffed spelt with some milk.
2nd meal will be some of those veggie sausages that I forgot to take out of the freezer yesterday, with some leeks.

@Mrs Redboots as you say most chicken is keto unless something added to it and this is chicken in a sauce/gravy marketed as keto/low carb as the sauce is relatively low carb
It's easy for me to assemble something simi!ar myself, and probably nicer, I just got carried away by the reduction\price and the fact that it's sous vide cooked and sealed for storage in a cupboard and can be simply reheated. Crossing fingers it makes a good pie filling

Breakfast was porridge, just plain today, I had tuna salad for lunch then it'll be chicken and vegetables for tea.

It's another dry day, so I've planted all the garlic except for the softneck which hasn't arrived yet.

I hope it will! Actually, most of the sauces I make for chicken or similar are low carb; I don't often thicken them, and if I do, it's with no more than a teaspoon of flour or cornflour. Mind you, I'm not really into low carb (far more into low GI, although I'm not totally fussy) as my blood sugar levels are remarkably stable these days. Or were, when I had six weeks of regular testing.

I'm still fine after the pneumonia jab - I can feel where it was, but don't feel unwell or anything. Fingers crossed for tomorrow!

I think I'm going to microwave a munchkin to add to the leftover veg from yesterday, and fry some halloumi to go with them. If necessary a sauce of garlic and herb cream cheese let down with boiling water, but I'm not too sure. It's one of those things I'll make up as I go along, Or, perhaps, some of my home-made ketchup, again diluted as necessary. There is yoghurt and stewed plums for pudding.

Meanwhile, I bought some runny honey and am trying to reproduce the nuts-in-honey I bought in France last month, which were so lovely on my overnight oats. Seems to work well - literally just poured some mixed nuts into a clean jam jar and then added as much runny honey as it would take!

ETA We had the mango for lunch pudding, but although it was ripe, it was rather tasteless. Am about to have half a glass of wine - I don't drink much, but this week seems to have been an exception, with a Hugo spritz on Tuesday with the book group, and then a glass of wine both last night and tonight. This will, I suspect, finish the bottle, which is a pity as it is delicious. Oh, it isn't finished, but I've been given a very mere amount. Hmph!

B: 2 scrambled eggs with 2 slices corned beef added in

2 hours dancing. Our usual teacher is away so no new learning, just back to back dancing, hardly time to breathe
Then quick coffee with a friend followed by supermarket shopping

Yes, need keep check on dates, loads of Christmas stuff but all the pates and cheeses were dated in November.

We'll be away at Christmas sharing an Airbnb with family so I'm trying to get my head around not having 2 large freezers at my disposal. I usually do a lot ahead, especially as we have 3 major birthdays as well. Planning starts here.

Dinner was beefburgers (no bun), cooked in airfryer on top of mushrooms and courgettes

@Annb I feel your pain with cars, I hate finding and buying a new (different) one. Nursing our 12 year old along.

Walking with another walking group today, this one I lead, chose a different park with even more leaves to crunch through, though it was bitterly cold. Didn’t warm up even indoors with the heating on! I needed something filling for dinner and decided on fish finger sandwiches! I haven’t eaten fish fingers since diagnosis but actually only around 22g carbs using low carb bread and some mayo, and blood sugar behaved. I did eat a few sticks of celery so my meal wasn’t completely devoid of veggies!

Wait, fish fingers in a sandwich are a thing???

I love fish fingers and I might buy a pack again (not to put on a sandwich, mind!). I haven't had them in ages but they're very handy if a leftover is just too little, just add 1 or 2 fishfingers.

I'm behind again, very sorry to hear about the bad outcome of your MOT @Annb . I hope the new car will still be fine in 30 years, you never know.

With all the MOTs happening at the same time here, we could start a thread on it.
My Dutch MOT wasn't finished on the same day because there was a typical Antje-problem. Something had to be welded because a previous owner had cut a hole to reach something. No problem, except there was wood right behind the hole, not good when welding.
The wood belonged to the bed frame and on top of that was my bed and a lot of accumulated stuff.
So rather than have the mechanics spend their expensive time unearthing the bed frame from who-know-what was on top of it, I told them I'd skip by tomorrow to unbuild the frame (and hide my dirty underwear).

MOT would be finished late afternoon so I had a couple of hours to spend and I decided to spend my money on lunch and being a tourist before knowing what the car would cost me.
Went to the beach and spent a leasurely afternoon working on maths (still going very slow) while enjoying a couple of coffees and the most ridiculously huge lunch I've ever eaten!

This was two large and thick slices of bread with enough warm smoked salmon to serve two people for a main meal, and it was utterly delicious!
Good thing I had all afternoon to finish it though, that took me a while with breaks in between. :hilarious:
Almost OMAD, I had no breakfast and I had a handful of peanuts and a piece of cheese before bed.

The car passed for just under 400 euros with some reparations, and I'm very happy it's now really my car!
They bought the old one for 100 euros, so this new and very beloved car has cost me less than 700, I bought it for 300, and it's good to go for another year!

Off to an illegal camping spot this weekend with the dogs and a friend, very much looking forward to it!

We're planning to cook on camping gaz. I have two of those wobbly old fashioned things. It's dark by the time we cook, and it'll be close to freezing point by that time. This will have to happen with the help of a flashlight.
Suggestions on what to cook under those circumstances?

That looks like a delicious lunch Antje. (Envious).

It was delicious and absolutely ridiculous!
Half of it for 3/4 of the price would have been an amazing deal. Next time I'll bring a friend and we'll order one lunch together. Or maybe it was just the quiet of the end of the season and they'd rather plate two portions than throw more away at the end of the day, who knows.

Didn't even go far wrong with my insulin although I stayed a little higher than usual all day. Eating on my own plus the waitress forgetting me meant a very generous prebolus to the point of mild hypo, and the stretched out meal helped a lot as well. I wasn't in a hurry to finish my plate as I had a couple more hours to spend, and they were fine with me nerding out for hours trying to wrap my head around maths problems, I asked if it was ok.
