I remember when I first joined here in august 2016 and anything under 8 was an impossible dream, then I started to see the odd 7 crept in, the 7's became a forest, the odd six appeared and gradually sprouted . Today I'm disappointed when I'm not in the 5's
My numbers have been below 7.8 97% ( non diabetic = 99% of the time) for the last 3 months based on a 24/7 monitor and below 6.7 % 83% of the time. ( non diabetic = 91%).
I've have an average of 32 g carbs per day throughout the time and I can see the difference when I have gone over my average.
I too am generally back in the fives within two hours of eating, the peak figures are usually around 6.8- 7.3 within 45 minutes of food. The transformation is remarkable. If you stick with the low carb, you will probably find the same effect

good luck
