I used to hate mince pies. As far as I was concerned they were tombs full of dead flies.

I as one who inadvertently ate a piece of cake with a squashed fly attached this was when I was a young whipper snapper can assure you that non of the above mentioned food items come even close.
Bearing in mind the fat content of any pastry based food, any rise could be a bit slow or delayed. Have you continued to test beyond your usual 2 hours (or whatever)?
You may have got very lucky and find you really are an examples of a metabolic body clock reset, but one day of extraordinary events, actions and consumption isn't the best way to drraw too many conclusions.

Do you think your mother would be willing to send me a couple of mince pies? After reading your post I do not want just any old mince pie to mess with my sugars and be my first mince pie, but I want your mothers! They sound just wonderful, the way you describe it! Do they keep for a few days until they arrive here or will they go stale? Can I revive them in the oven?It is just as well that my Mum will not read this post because her mince pies are a standard that are hard to beat, but these ones are truly awesome. Thin, melt in the mouth pastry, flavoursome and slightly boozy filling just right for a winter evening or a dessert that is followed by a brisk walk and guess what.... more mince pies! One made by a different person for good luck each month during the New Year - there are just 6 people making the pies at this company so I will need to find 6 more people making equally awesome pies! Lots of testing required, and not the carb tolerance kind.

... it seems reasonable to me that this should be allowed.
And after reading study after study, nobody has specifically advised against it.
So that's the same as saying that it's fine.
