Hi all .I'm having a soup day making up litres of the stuff to use on my soup only diet .Can anyone with more knowledge of spices recommend good ones to use in
1) Cauliflower soup
2 Butternut squash soup
3) Broccoli and leek soup .

I'm trying to keep the ingredients to a minimum to keep the carbs as low as they can go so really need to add flavour with spices .

I would think a bit of garam masala would be nice with cauliflower soup, though I tend to have mine non spicy. Or cumin.
Butternut squash is nice with cumin, coriander, turmeric. Or just a dash curry powder. I roast mine with garlic and a chopped red chilli and then pop all that into the soup.
Broccoli and leek I'm not sure about having spicy. Maybe just crumble a tiny bit of Stilton in for some bite and a grating of nutmeg. Season well with black pepper.

Love nutmeg .Is there anything there that would go with ginger as i love ginger too ?

Butternut is good with ginger in it. If you can eat carrots you could put a bit in that, and some fresh coriander.

I'm roasting a red pepper and the squash as we speak so will add the ginger and a bit of nutmeg ? I was going to add carrots but they are so carb high I thought I'd give them a miss as i have 2 squashes :)

Yikes I'll only be using one squash having just checked the carbs !

Broccoli and stilton is lovely

It is Patricia!! Sadly I haven't any stilton in .Maybe I could add some cheddar at the end ? I was going to add a little creme fraiche to the broccoli one anyway to make it creamy .It's like Dr Frankensteins lab here today ,all experiments .I'm no cook as you can tell :D

No, no, you're right on target. As with stilton & broccoli I often add cheese (usually cheddar) to soup to boost the fat content. You can grate the cheese on top and grille it if you like. I also start the veg off in steamed coconut oil. I prefer spices to salt.
Also passata tomato or blended & sieved tomatoes make it sweeter and boosts the colour (nothing worse than greyish soup).
Also beetroot if you can tolerate it.
Also a splash of cider vinegar for a bit of a zip. If I blend it I add cream, again for a bit of extra fat.

Er, I've just had chicken salad with mayo .....

I have cider vinegar for our chickens Deejay ...which soup does that go in then ? Just going to work out the carbs in the tomatoes .They are for the butternut squash soup ,yes ?

Each soup should make 6 portions at least so I'm sat here with my calculator to work out the carbs :-)
 
Plenty of garlic Susie, you might not win many friends but it will keep colds and bugs away ;)

OK sorry, I don't calculate carbs. Yes, tomatoes with butternut. The vinegar goes with tomato for a touch of sweet & sour. Also I usually start everything off with onions & garlic. The cauli sounds good! I usually use all my cauli grated in pizza bases & cheese bites.
