@vinirvin Hello and welcome. You could try cauliflower rice and there may be a recipe on the forum. Use the search function and happy eating!

Hello @vinirvin Sadly your parents will have no understanding of the impact of carbs on your blood sugars.. here in the UK we can use cauliflower as an alternative to rice however I don't know if this is accessible to you in Indonesia, basically we blend it then steam it with spices, seasoning to flavour and it's a very low carb alternative. There are also Shirataki rice/noodles you can purchase but again not sure about local availability for you there, they are manufactured in China and are 0 carb, let me know if you can get hold of either as i'd be interested to know :)

Hello @vinirvin:)

Instead of alternatives to rice, what about adjusting your insulin timings?

Providing you're not on mixed insulin, and are on the basal/bolus approach (one daily long acting insulin and an injection to cover each meal) - then there are options other than excluding the rice entirely. If you're on mixed insulin, then this isn't an option I'm afraid.

If you take your insulin in advance before eating, 10, 20, even 30 minutes - you can minimise the spike caused by some carbohydrates - which in turn keeps your BG under control. The time you have to wait between injecting and eating is very individual and something you'll have to find out yourself. Start low and work up until you find the best amount of time. Remember, the important value is the two hour mark. Providing you've counted the carbohydrates correctly - you should be below 9mmol/l after two hours of starting your meal.

I must admit though, cauliflower rice is actually pretty good. My Mrs loves it and she's not even diabetic or on a low carb diet!

@GrantGam is spot on with insulin timings.

You could also try wild or red rice as I find they are better for my levels than white rice. Or quinoa if you can get that there.
