Alternatives to Breads and Rice...

Kev, if it's any consolation my cholesterol has fallen since I dropped carbs and increased protein and fats. I have to say I pay zero attention to it anyway as I consider intake figures meaningless given that we make 80% of it, but there you are.

I was not aware that diverticulitis had any association with eating red meat - I can't find anything (in a very quick search) that would support that. Isn't diverticulitis apparently eased by increasing fibre intake?
regarding Diverticulitis…you are correct about increasing fibre….and perhaps you are right about red meat…I take statins for high cholesterol
I need to focus on my Diabetes the rest should take care of themselves
 
Ive was diagnosed type 2 at the end of January. Im on metformin twice a day. I looked into what i could eat and what obviously should be avoided. I eat wholemeal, seeded bread everyday, just once, i cant live without it! Ive given up a lot of foods, especially the sweet kind haha. My blood sugars are coming down rapidly and im proud of myself. I personally think that a small amount of bread will do no harm.
 
I gave up bread, fruit and carby foods at diagnosis. I was surprised to find I didn't miss it. So much yummy food we can eat with impunity. I eat red meat whenever I want it. It can be difficult to separate all the propaganda from correct information - it becomes something of a hobby! The questions to ask are who benefits, what is the real agenda? Thus we can nail commercial interests as well as those from a hidden agenda from pressure groups.

I dont really eat red meat now, at the start of all this my cholesterol and tricicycides were really high. Glad to say ive got them within range now.
But your right, theres so many different opinions on what to/not eat. As long as my sugar levels are going down, im doing the right thing for me.
 
Cauliflower rice is a good alternative. I buy them in frozen packs you just microwave for 4-5 minutes. Most shops do the frozen ones! Ice swapped bread for whole meal crackers. I can tolerate a few

A food eaten by Humans for millions of years is unlikely to cause problems for us.
I eat any meat, fish, cheese, eggs, full fat yoghurt plus a few low carb veges and mixed berries - I feel great for my age (almost 72) and am doing well compared with the years pre diagnosis. I have even coped with having Covid 5 times and two jabs - one of which made me seriously ill.
There are some good low carb breads to make - as long as you treat the dough gently, and I use roughly chopped cauliflower - chopped after cooking - mostly for a base to curries.
I use cauliflower to make cauliflower cheese which a lot of people really like.
Steam cauliflower until almost cooked, warm a dish in the oven and then put in the cauliflower, cover with cream cheese, sprinkle on any herb or spice you like then cover in a grated hard cheese, place in the oven until the cheese is slightly tanned or golden - depending on the colour it started off. Don't get it too hot.
