Amount of carbs

Talking of smoked haddock tonight I’m making a favourite of ours which is skinless smoked haddock cooked gently in a wide pan in a little double cream with a handful of fresh herbs added at the end. Tonight as a luxury am adding a few scallops which will cook at the same rate. I will have mine with cauli rice, the best and most convenient I find is packs of 4 frozen individual portions from Asda or Iceland which can be microwaved in minutes as needed.
I would like to join in congratulating you in managing two very tricky conditions while at the same time grieving the loss of your wife. Finally Dobbie is a fine fella looks like he really has landed on his furry little feet!

Tbh our cooker not been used since my beloved wife was diagnosed with cancer.

I’ve been using the microwave, ninja foodi smart lid and the ninja soup maker.

Also purchased a lot of ready meals from cook and M & S. so my cooking skills have a huge way to go.

The smoked haddock (and rainbow trout) cook lovely in the microwave.

I’ve “mastered” boiled & scrambled eggs in it also.

Bacon & eggs on toast in the ninja foodie also

As I said my list of achievements is just above zero :))

Dobbie rarely leaves my side now, I think he also has separation anxiety. However he is a great comfort to have around.

Ps the health side I am fortunate to have 3 amazing teams who have looked after me some 20 odd years now.
 
Your list of achievements is well above zero believe me, from my years as a chef and working front of house in hospitality mastering boiling an egg is no mean feat- you’d be surprised how many soft boiled eggs I’ve returned to the kitchen that are overcooked. You’re doing fine ;)

I love chicken since I discovered the air fryer which makes it easy & fast to cook. I make sure the skin is off as they advised.

Cauliflower rice crops up everywhere. I must try it. The cauliflower is one vegetable I cannot eat the stalk part (and of it) because the list I have said it’s fibrous and could potentially cause blockage. Honestly they do make cooking & living a tad difficult with all these restrictions.
Not sure what fresh wedge salads are, will look that up.

But that's the best bit!! I have an old Tefal Actifry and use it for chicken thighs - and the skin goes all crunchy with a fair bit of it mysteriously evaporating as it is lifted out .....
The fat ends up in the bottom of the pan and is great for cooking mushrooms or stirfry whilst the skin evaporates.

Yes natural smoked haddock the best.

My dietician said *any* hard cheeses, whether grated of whole is fine to be eaten but when melted creates potent ion problems of blockage or restriction in strictures so cold cheese it is. :)

He is a cranberry tortie point Siamese rescue, 7 years old, we had him from about 16-18 months old.

Lovely tabby-point Siamese - chocolate? My avatar is a Fawn Oriental. :)

Thank you, through YouTube discovered best soft eggs for me in the air fryer for 7 minutes :)

I use silicon liners now (really cheap) and makes keeping it clean easier.

The top is harder, but using ‘Pink” and an ultrasound brush seems to clear it. The more regular it’s cleaned the easier I find it.

Is that air fry or air crisp option please!

Over here he was classed as a cinnamon tabby point.

As for sensitive, he is amazing.

When I’m having a Crohns flare, he gentle just lays besides me and pats my face :)

He loves to cuddle up under my arm anyway :)

We have always rescued Siamese’s since we were married (just short of our 55th anniversary when we were “temporarily separated ”)

Oh the Tefal Actifry I have is very old indeed - it has a timer, and that is it. Today I put the pan and the clear part of the lid, which is detachable, into the dish washer for a clean up after half a packet of chicken thighs for dinner yesterday, then cooked the other half today, with more mushrooms.

My chicken I pat dry, then brush ev olive oil all over. Then season with kosher salt and fresh ground black pepper, I then lightly coat with
Old Bay Seasoning
Finally spray all over with avocado oil (as I read other others above 200C are potentially carcinogenic)

Then 35 mins @ 200C
Turning half way

This is frozen chicken thighs with bone & skin.

Sorry, going a bit off topic but cannot resist pic of your lovely cat - not sure I have heard of a cranberry tortie point Siamese but he is very handsome!

I cut open the packet of chicken and throw however many of them are needed for the meal into the pan - close the lid, switch on and set the timer. When they are cooked I lift them out and throw in the mushrooms, set it for 6 minutes cooking, so I just have time to give my husband his dinner and sort out mine before the mushrooms are done.
he Actifry is big enough to take the mushrooms as well as the chicken, but the stirring around squashes the mushrooms so I do them separately.
 
If you have lost weight and have an auto immune condition like Crohn's, have you been tested for Type 1?
Weight loss is a common symptom of Type 1 which is an auto immune condition and auto immune conditions have a tendency to gather together.

Thank you, but I was tested in hospital. It is steroid induced diabetes (caused by multiple use of steroids (Entecort) to ease the many flare ups I had simply caused by grief & stress).

The 5 stone weight loss was initially due to grief after my beloved wife died just over 15 months ago, the further 2 stone loss was due to the multiple Crohns flares ups after caused by its stress.

I trust my teams implicitly and grateful for their care of me.

For my bad days when even standing up is an effort I cook chicken breasts or salmon fillets by wrapping them in foil and baking, You can add black pepper with emon juice or herbs to vary the taste.
Then serve with microwave ready prepped portions of green veg and cauliflower rice. Put some butter on the veg
Followed by full fat Greek yogurt with a few berries
