an idea I've been thinking about for partys

Just an idea.............................but what if you took a pkt of fairy cakes and cut the lids off, then scoop out as much of the cake insides as poss leaving just a thin casing. Fill with squirty cream and add a Strawberry to the top. Finally, either add the lid by sticking it to the strawberry with cream or to keep the carbs down, leave the lid off. They can then be smothered in cream and another strawberry stuck on top. Squirty cream is pretty good as far as carbs go, strawberries are fine, it's just getting the cakes down in carb value that could be a problem. If this was at all possible they would look great at a party.
Any thoughts

Nice idea and they would look great but fairy cakes are quite small so by the time you remove most of the middle they would be very fragile and difficult to move or pick up. On the other hand, if you made them in muffin cases you would have a larger cake and more stable sides which may just take the weight of the cream and fruit, that's what I would try. My Grandaughter is getting married in a few weeks so could I put my order in now for 150 ?!

It's nearly a trifle, are you having a tea party then ?

You are absolutely right............Muffins is the way to go as my idea was to get a bigger ratio of cream and berries to actual cake. The cake is merely a vessel. Thank you poohtiggy:happy::happy:

The Cheshire Plain would be nice we could have a picnic!
 
Muffins made with ground almonds and filled with real thick cream and strawberries is the way to go.

If you want to go slightly continental, look at Scandi's real chocolate muffin recipe, replace choc orange with plain for the base cake , add a bit of real cocoa powder to your cream filling and replace strawberries with a cherry or two, and you have a sort of diabetic Black Forest mini gateau - very posh and rather yummy too! :p

If you want to go slightly continental, look at Scandi's real chocolate muffin recipe, replace choc orange with plain for the base cake , add a bit of real cocoa powder to your cream filling and replace strawberries with a cherry or two, and you have a sort of diabetic Black Forest mini gateau - very posh and rather yummy too! :p

That sounds great Robbity. I used to love Black Forest Gateau and I've got ground almond in already.
 
I rarely bake - there's just the two of us, so no point in having something in a tin 'just in case'. Once diagnosed I tried a few low carb baking recipes, but they always seem a bit heavy and rather wet. I do own one of those cake guillotines that split a sponge into thin layers though. How about a low carb sponge, split into thin layers and stacked with whipped double cream, or thick egg custard and layers of sugar-free raspberry jelly with raspberries set in it? That would make a good birthday gateau, wouldn't it? You could make a chocolate one and give it a bit of raspberry schnapps.

Now you're talking. How much are those sponge splitters please? Might look into getting one.
 
Ooh. Mine came from Germany, but I think I saw one in the kitchenware bit of Sainsburys recently - or try Lakeland. Shouldn't cost more than a few pounds. Hold on, I'll google.
 
A pretty picture will do, thanks. In my head you will end up with a professional-looking thing of beautiful sharp layers, rather like a German cake shop display. Good luck with that! Many years ago I worked in a German cafe and dealt with these monsters on a daily basis. They were huge and extremely heavy (I dropped one once!)

Good effort - although nothing like the size of my German behemoths (is that the right word?). The baker's trick, even when using the cutter, would be to turn it upside down and have the bottom as the flat top and decorate.
