Hey! My mums just been diagnosed with type 2 diabetes and is panicking a bit about what to cook

I wondered if anyone has any recommendations for cookbooks or anything that I could get her to boost her confidence a bit?

ww.dietdoctor.com might help, and there's some meal plans in the back of Jason Fung's The Diabetes Code. Basically it's protein up, fats moderate, carbs waaaay down, as carbs turn to glucose when ingested (So not just sugars, but starches raise blood sugars too). So any book on the Keto diet or low carb would probably help.

What type of cook is she? Does she like to experiment in the kitchen or does she keep it simple?

https://www.dietdoctor.com/home as recommended by @JoKalsbeek above covers a variety of tastes and dietary preferences - no need to sign up for their paid options unless she wants to.

Many people swear by the recipe books produced by the Caldesis such as this one. The recipes are a bit fussy for me, but plenty enjoy them.

This from Paleo Canteen is also a decent option.

There are loads of websites too - just have a Google of keto or low carb.

If it helps mum, I was a dreadful cook...(do a nice breakfast, mind.)

I ended up learning a lot along the way, but I finally settled in the main for a none too fancy route .

Just ...
Meat & veg....that err umm.look like meat & veg should.

Cooked by me and spices herbs added as & when. Simples.

In the beginning I never used recipes
I just learned to make swaps

Courghetti ribbons replaced spaghetti.

Swede replaced potatoes

And cauliflower rice, replaced rice .

Over time I sort of changed my mentality of trying to recreate old favourites faithfully.

For instance cauliflower rice became just chopped up cauliflower to go with a nice curry.

Sometimes it's a slice of roasted cauliflower (cauliflower steak) the curry sits on.

Many recipes etc online (diet doctor as above was where I started )

Fancy if mum chooses
Or just swaps for carby items in old favourites .

Choice is hers .

Cooking for diabetes is way easier than we think when first faced with it. I'm a lazy cook - plain simple country cooking suits me - home-made soups, stews, roasts, stir-fries, grills with meat, fish, eggs, cheese, yoghurt (full-fat and plain) cream, green leafy veg, mushrooms, green salads, pretty much covers all bases. Add herbs and spices in plenty if you like.
