I've not tried these yet...would they be considered lower Carb than potato chips or more specifically low GI?

Lentils are (in my book) high carb. Maybe not quite so high as potatoes, but I don't eat either these days. I don't pay any attention to GI, as it doesn't seem to have any impact on me. You'd have to try them and see what they do to your BG over a few hours.

TBH I'd go for ah honest packet of crisps . Anything so processed is unlikely to be low GI.
Once a week I have some veg crisps but that's because I prefer them to Pringles and not because I am deluding myself that they are any better.
If you enjoy them eat them or limit yourself to a few Pringles unless 'once you pop you can't stop' etc.
