Back from the Dr's....

Thanks...at the moment I know I am not eating anywhere enough of anything as am still a bit scared so I know my carb intake is higher than I would like BUT my BS is still down from my fasting and until I can sort out what I am gonna be eating I am just gonna have to be kind to myself and know that it's not imperative that I do this in one go. Not having a nice afternoon as just replied on someone else's message but this was the first place I wanted to run to as those feelings of isolation and being on my own are majorly impacting just now xx

I tend to have a set BF and lunch that I know work. Takes all the thinking out. That's one of the worst parts. I like to keep food as simple as possible. I'm very low carb.
BF is the hardest to get right as we are most insulin resistant then as well as all our hormones are waking up and releasing bs.
The two BF I find work very well for me are half and avocado any way you like it with celery sticks. Or a piece of Boston / Bibb lettuce with mayo mustard and a piece of deli turkey and a slice of avocado. You could always have a hard boiled egg, egg salad or sliced deli meat. I love it on a lettuce wrap.

Lunch is usually chicken turkey salmon or tuna with mayo topped with onion and scallion. Side of avocado slices. I make different creamy dressings with a mayo base and add hot sauce, horseradish or mustard. Salads topped with a little protein is good too. All these can be made ahead of time, very little clean up. I pre cook loads of protein and freeze in portion sized baggies. Then I take one out and defrost in cold water for a few minutes and all I need to do is assemble. I chop scallion onion radish and celery and store in the fridge.

Dinner is roughly the same. I get variety with herbs and sauces.

Please don't look at it as what you can't have but more an adventurous way to change your diet to tasty foods.

@MissMac, you can be assured that you won't be on your own in this forum. It's only natural to have good days and bad days and eventually the good will out weigh the bad. Some have compared being diagnosed as grieving for a former life and it does take time to get used to it. Plus life still goes on around you with it's own problems outwith the diabetes. Just don't be harsh on yourself and don't try to tackle too much in one go. A diabetic friend once told me that he's only diabetic 6 days of the week and has a day off at weekends. Basically, as long as you're in control most of the time then the odd hiccup won't make any difference. Just take it one step at a time and at your own pace. Whatever you do with your eating will be better than it was before diagnosis! So you've nothing to lose. Take care and know that you have loads of lovely people around you for support, help and encouragement. And I'm sure that will apply at home as well as on here xx

Thank you...I cannot handle strong flavour foods for breakfast....it takes me quite while to be able to deal with anything like egg or cheese or anything like that...hence it is proving to be a bit tricky though am happy with my yoghurt seeds and berries...I have been using oats but know these are going to have to go really!!
In other news I tried avacado tonight....that is NOT being added to my list...still least I tried!!! This week I have off is for me to experiment and find things I will eat that are low carb firstly then regular testing and build from there. I've found some recipes that seem to be low carb for pancakes so the plan is to be able to make some up and freeze for ease...ooooI'm rhyming now! xxx

My granddaughters (5 and 7) each had a tiny taste and said yum so I gave the rest to them. They took a mouthful each and suddenly they were no longer hungry lol. That poor avocado made the rounds before finding itself in the garbage can.

I struggle to face a breakfast- always have - and so coffee with dollop of donkey cream stops my blood sugar rising in It's tracks:)

Then I have a healthy drink supplement of NuZest Good Green Stuff and Clean Lean Protein and I always feel full and energetic until lunch time:)

I very nearly started Googling to find out more on donkey cream - @KevinPotts has shown himself to be such a brilliant diabetes research guinea pig that I SO could have believed it to be a new tool in the diabetes armoury.....!

I love pininterest for looking for recipes, you just type in low carb and a veg and a whole help POP up!
Im going to experiment with making my own chocolate grandparent over the weekend. I loved muesli before low carbing so with seeds and nuts and chia seeds I can see a way forward!!!
Don't give up on the avocado yet! Did you squeeze Lemon juice over it and then fresh cracked black pepper? You can make yummy choc mousse with it. What about trying it mixed with home made mayo with chicken salad?
I have always believed trying something once doesnt really mean much, and you need to try something at least 3 times before putting it in the yum basket. You may not like the way it was prepared the first time and someone may make it different the second that site your taste buds alight.
I low the coriander (cilantro) but I have at least tried it a dozen times now and it still tastes like soap whether it is cooked or eat.
But its each to their own!
By the way I love avocado! Especially if I make it into a dip with a bit of diced tomato or salsa, fried onions and bacon stirred in with Lemon and black pepper Served with sources cream and home made low carb seed biscuits. My idea of heaven!!

I know, I am teasing, but am curious what you ARE making out of chocolate?

And re the breakfast cereal, have you seen this? It is beyond delicious, has NO IMPACT on my bg, provided I don't swamp it in milk (I use cream and water instead) and is really easy to make.

I have one waiting in the fridge to try on exactly those grounds, that I might like them 30 years after I decided "Yuck!"

At least my predictive text has a sense of humour all of its own

Chocolate grandparents is on the cooking menu for tomorrow. I will hopefully be enjoying it for breakfast on Sunday morning with some delicious vanilla yoghurt.

PS I won a cadbury competition today and part of the prize is delicious cadbury coco chocolate which is 70 or 86% chocolate. I am a bit happy tonight and am anxiously waiting for it to arrive
