Baking...which sweetener to use?

Looking to bake some lchf muffins to give a variation for breakfast times. Which sweetner should I use?

Truvia
Splenda powder
Stevia powder

Or something else?

You could use any of them, but remember that Splenda is 1:1, ie one teaspoon is equivalent to one teaspoon of sugar.
Truvia (and probably Stevia) is a lot sweeter, and a third of a teaspoon is equivalent to one teaspoon of sugar.

Hi, I would check out Ewelina's posts and blog. Her baking recipes look lovely and she does mention which are the best sweeteners to use without any aftertaste and the best for diabetics. :woot: Post me your recipe too when you get a chance ;)

I use Truvia as it's the only one which mentions polyols on the nutritional label. I'm not sure if the others are polyols or not.
 
I use splenda, works fine for me. Plus, as mentioned, it's as sweet as sugar by volume.
 
I like xylitol and erythritol the most. Splenda is my second, no aftertaste but it doesn't add volume as xylitol does
 
Xylitol. Its from birch tree. It has no effect on bg. Use with care as it has a laxative effect.
 
But don't use Xylitol if you have a dog as it is highly poisonous for dogs.
 
I make muffins without sweeteners, i find the natural sweetness of the almond flour is enough or I add some vanilla seeds . For breakfast I would make savoury muffins and add herbs and spices for lots of flavour. The mini cheese loaves on Ewelinas site are yummy and I can recommend them for breakfast.
