what is the best sweetener to use in baking, for a T2 there is so many out there
 
sorry this is for a one off birthday cake not gonna be an everyday thing
 
Believe Granulated Erythritol is the one to go to, but people obviously have different opinions. TBH I no longer use sweeteners, I don't do any baking for myself.
 
If it’s a one off, I wouldn’t worry too much. Just find a low carb recipe you like and follow what it says. The conversion of one sweetener to another isn’t always easy.
This is one of my favourites if you like carrot cake!
Ha ha, it calls for sweetener of your choice! I’ve used both xylitol and sucralose.

Just make sure you use whatever is in the recipe as they all have different levels of sweetness, and that the formulation hasn't changed.
Truvia, for example, have recently introduced "truvia for baking" but is meant to be used 1 tablespoon instead of each tablespoon of sugar , which as it is so light is virtually a whole bag per cake (and over £5!). However the original Truvia was much sweeter and 1 tablespoon replaced 4 or 5 ordinary sugar.

Low carb ingredients are expensive, so I don't like to share my baking. I freeze it in individual portions

If it is really a one off, and you are only going have a small slice, I'd be tempted to make a proper cake and let the carb eaters eat most

Peas(14g per 100g) and beetroots(9grams per 100g) have higher carb content. Beetroot is sweet too.....
 
I swear by granulated stevia (and I sometimes use liquid stevia when liquid called for, ie substituting honey....). A lot of alternative sweeteners are a mixture, so mine are often a mixture of stevia and xylitol, or ethritol (excuse spelling). And I use a LOT less of it than the keto/paleo/LCHF alternative baking recipes say.

Xylitol sends my BG sky high but I’m fine with erythritol. Another reason to not use xylitol is it’s poisonous to pets and being clumsy I’m likely to spill some on the floor when I’m baking :rolleyes:
