Hi Rachox,If it’s a one off, I wouldn’t worry too much. Just find a low carb recipe you like and follow what it says. The conversion of one sweetener to another isn’t always easy.

Xylitol sends my BG sky high but I’m fine with erythritol. Another reason to not use xylitol is it’s poisonous to pets and being clumsy I’m likely to spill some on the floor when I’m bakingI swear by granulated stevia (and I sometimes use liquid stevia when liquid called for, ie substituting honey....). A lot of alternative sweeteners are a mixture, so mine are often a mixture of stevia and xylitol, or ethritol (excuse spelling). And I use a LOT less of it than the keto/paleo/LCHF alternative baking recipes say.
