Hi @johnoo there are 17g or carbs in 100g of balsamic vinegar. This about four tablespoonsful. If you have a serving of one tablespoon of a oil and balsamic vinegar dressing, you will be consuming about 1.5 g of net carbs. Hope that helps.
Straight up balsamic is ok, but be careful of those with flavour in it. We have a store here that sells ones with things like basil, lemon, orange and such as flavouring in it. They do add sugar to enhance the flavour.
I have to make a special trip to a supermarket other than Lidl in order to find vinegar without added sugar - I buy red and white wine vinegar, without added unfermented juice, which is high in fructose.
It doesn't seem worth having extra carbs even though my sense of taste is quite acute. The wine vinegars I get are from Tesco
I just use malt vinegar as I can get it without the added sugar and I just add that to sea bass, cod, tuna and salmon as that is the only fish I eat with chips and a couple of slices of low carb bread with a cuppa
I eat all my fish fresh from the water as I clean them and fillet them and then cook it with a little oil and on a gridle pan as the chips are cooking and add salt and pepper and then when everything is cooked the malt vinegar and serve
