Biscuit Dough - for shape cutters

Do any bakers out there have a recipe for low carb biscuits? I want to be able to make some with my almost 2 year old so really want a biscuit dough that we can cut shapes out of rather than a cookie recipe which is rolled or spooned out.

It is making me feel ridiculously sad that I might not be able to something as simple as make and eat biscuits with my little one.

Although, I am a bit bothered about giving him sweeteners, which I would have to if the recipe was low carb, so I wonder if I should just make a 'normal' recipe and abstain from them myself.

Thanks, I'll give these a try. I never thought to search for low carb gingerbread men! Do you think it would work without the xanthum gum?

I don't know, but the recipe suggests using arrowroot starch instead. I got both in Sainsburys.

I will warn you that they were quite hard biscuits (could be my rubbish baking!) so watch your little one's teeth.

@ewelina is a baking queen. She might be able to suggest a recipe.
 
I have beautiful biscuits cutters and to be honest ive never managed to make any good dough :( I think the only option would be to mix ground almond with egg and xylitol. it would give you nice biscuits but nothing similar to traditional one. check elanaspantry.com. she has lots of recipes for this kind of biscuits. good luck :)
 
Oh dear @ewelina what a shame your biscuit cutters are redundant. I will try almond, egg and sweetener (not xylitol though as we have a dog. I've used it once and was so paranoid my little one would drop some cake and the dog would eat it!)

I might add some bits of dark chocolate or something to it to the mix to make it a bit more interesting
