@andyasw are you confident that your basal insulin (Lantus) dose is correct?
It maybe useful to start with a basal test to ensure that is correct and then work out timing and dose of your bolus (Humalog). Bear in mind your bolus dose may vary at different times of the day.
If you are taking your Lantus at night, you maybe noticing that it is not lasting 24 hours. Some people split their Lantus (some in the morning and some at night) for this reasonThe highs are not in the mornings but within a few hours of my dinner (evening meal).

It may be the food you are eating, I have been a type 1 for 60 years. I find bananas and rice appear to raise my blood sugar levels many hours after having eaten them. I use a spreadsheet to record what and whenI've been T1 for 34 years and recently started on Libre 2. I use a spreadsheet to record what and when I have eaten but it also allows me to record insulin doses and blood sugar readings. This gives me some insight into the potential culprits.
