I had a cup of tea and bowl of shreddies with sweetener for breakfast and about and hour later I felt quite lethargic so I used my blood test meter and it said it was 14.1 mmol/L. I am confused when I am trying to eat healthier.

Shreddies are high carb. Milk has carbs, too. Try switching to a fried breakfast (without the toast) and you will see much better readings.

It will be the cereal! I noticed the same pattern when I got the Libre sensor so started switching to lower carb breakfasts which keep me much more steady until lunch

Grammes of carbohydrates per 100g.
Shreddies = 73.3g
Skimmed milk = 5g
Semi-skimmed = 5g
Whole milk = 4.7g

Alternative to milk (but much higher in calories so smaller amounts would be best):
Double cream = 2.4g
Coconut cream - 2.9g

For you to get a figure like that you have eaten far more grammes of carbohydrates than your body can cope with.

The only time I got a reading like that was after a rather ill-judged Chinese banquet a few days into my change in lifestyle after diagnosis.

You may find a breakfast of full fat greek yoghurt and strawberries, or a breakfast of eggs and bacon produces a much lower spike in your blood sugar.

I do not take milk in tea or coffee now as it spikes me too much. I use coconut cream, and many people on here use double cream in coffee as it is much lower in carbs than milk.

I have also cut out bread, pasta, rice, potatoes and anything else that has more than 5 grammes of carbs per 100 grammes.

There is a board on here about Low Carb diets that you may find useful:

You may find it helpful use your meter to test your reactions to different foods to see what you can tolerate - you should test 2 hours after the first bite of food, and keep the rise in blood sugar to less than 2 more than your reading before eating.

Have a look at dietdoctor.com for some low carb ideas for breakfast (they are not all fry-ups).
It's also a common discussion on the forum if you search around (hint: try searching for "Breakfast").

As others have mentioned, break cereals are loaded with sugar, either as sugar or carbohydrates, which is how lots of sugars are stored together. Try a low carb breakfast a couple of times and see how your bloods test afterwards.
Sorry, Welcome to the forum. :)
Wish you well.
